Why This 130-Year-Old Steakhouse Is Actually Best Known For Mutton Chops | Legendary Eats
Keens is one of the oldest steakhouses in New York City, but it’s arguably more famous for a plate that’s not steak. The restaurant serves over 400 orders of its legendary mutton chops each week. Insider’s Taryn Varricchio visited the storied steakhouse to see how the famous plate is made and why customers consider Keens a Manhattan institution.

The reason that mutton fell out of favor wasn't the food preferences of returning soldiers, it was the shift from using wool as a primary textile to other sources such as cotton and synthetic fibers. Mutton was a by-product of wool production, so as wool usage went down, there was less mutton to go around.

We had our wedding in the Empire State Building in 2004. We were looking for a place to take our small party for dinner afterwards. We looked at several restaurants. They all kept changing minimums and bar charges and endless other details - except Keen's. What they told us initially never changed. We were in the Lily Langtry Room, and service, food, everything about the experience was exceptional. I did have the mutton chop (because how can you visit an historic location and not partake of their signature?). Everyone in our party raved about the experience. My wife and I were back over a weekend in Manhattan in 2009 (I did have the mutton chop again - so good!). Such a treat!
We had mutton chops as kids back in England but they were boiled first then roasted with rosemary and thyme and lots of salt and pepper! With onion sauce and mash spuds! Pure heaven!

@Rich Yeilding Exactly right! Mutton is a stronger (read gamey-er) flavor than lamb but no more so than comparing calve's liver and beef liver. Beef is "aged," the flavor is more intense than calf or veal (which has to be my personal least favorite). One of the most fabulous dishes I ever had was Navajo mutton stew from a food truck at the annual Indian Market in Santa Fe , New Mexico. It had steamed corn, green chili, onions, mutton, garnished with cilantro and served with fresh tortilla. It's a 20 year old memory, still crystal clear. Keen's will be on my bucket list now.😀
I had the mutton chop here the night before I left for boot camp in March of 1970. For a food lover, especially a lamb lover, it should be on your bucket list.

Hello new addition to the bucket list
Was here in August with friends for a celebration. Wonderful service and marvelous food. Had the biggest and most delicious Porterhouse steak ever (probably the same steak that appeared in 4:23). They also gave you plenty of bread and celery/carrots for appetizer so if you want you could skip all the sides (not that they are not delicious though). Besides pipes on the ceiling, they have a great collection of historic paintings, newspaper clips and pictures. Found several framed clips of reports on Abraham Lincoln's assassination and afterwards

Wow , I need to go to this place soon with my dad god willing.
In England, the mutton served here would not be classed as mutton. Lamb is less than a year old, Hogget is between one and two years old, while Mutton is over two years old, but usually eaten at 3 to 4 years old (used in stews and pies etc). The older it is, the tougher it becomes and the more gamey it becomes. These beautiful looking saddle chops are probably Hogget.

It doesn't need salt or pepper because it's already well seasoned. If you dine at a restaurant, the food you're served is heavily seasoned. Seasoning, salt especially, enhances the inherent flavors of the food that you're eating which enhances the experience. If you're dining out, embrace it as an indulgence. You're probably going to be eating food that's prepared in a way that's not typical. That's part of the fun. Everything in moderation.
Gotta try this restaurant...
Lived on a farm when I was younger We had sheep and I LOVED mutton. It's way better than lamb in my opinion. Way stronger flavour and fattier as she said
"This does not need salt. It does not need pepper." ....right after the shot of them salting it.
