Lamb Shank Osso Buco with Karen Akunowicz

Karen Akunowiscz, chef/owner of Boston’s Fox & the Knife and Bar Volpe, makes her version of osso buco, a classic braised Italian dish. Karen uses lamb shank for her osso buco and adds rose harissa in her braise for a unique flavor, and makes a rich saffron risotto and a bright herb gremolata spiked with ginger.

She's very cool I love her. Also love this series - the fact that all the recipes are tried and tested and are famous dishes at famous restaurants lets you know it's a damn good recipe

This dish looks amazing. But as a Persian, I was shocked by how she used all those beautiful threads of Saffron! You can easily use a tenth of what is advised in this recipe. Bloom it properly (ie grinding saffron and brew it for a few minutes) and poor it on your risotto shortly before it is done.

Same energy as Giada but with the added bonus of badass energy. Probably be pretty cool to have a couple drinks and a good conversation with Karen... Edited to add that you're all kinds of welcome to cook for my wife, my son and myself anytime......as long as you let us reciprocate :P

Why the music?
Karen cooks like my father, who was Cypriot and a chef/restauranteur, which is to say she's imposing standard Western restaurant cooking onto Mediterranean cuisine. My dad learned to cook at catering college in the UK, not from his mum, and spent 30 years in a French-food environment before returning to his roots. So I learned from him to be liberal with the salt (I should note, though, Karen, that he had several heart attacks in later life!!), to brown the garlic before adding the onions (or here, bizarrely, the celery and carrot before the onions) and many more inauthentic things. Of course, it wasn't until I moved to Greece in the Eighties, got married and watched my mother-in-law at work in the kitchen, that I realized how inauthentic his cooking was... Anyway, one last thing, when my mother-in-law or any of her numerous sisters made a dish with even a tad too much salt (i.e. around a tenth of the amount Karen used here, or less!), she would damn her cooking by calling it 'tasty', which--in the end--is something restaurant food tries to be. Proper home-cooked food strives to be authentic, healthy, welcoming and a whole lot more.
She has a nice radio voice

The entire point of osso buco, as its name suggests, is to have bone barrow braised with the meat, which is why lamb is not common for osso buco (it's meant to be veal). So, this isn't osso buco, it's just a lamb stew.

Lombardy too far North to be 'Mediterranean', I'd say. Definitely Northern Italy, with more northern cuisine. Sicily, on the other hand...
As an italian from Lombardia I can telll this is not traditional at all. Lamb is not a meat we use a whole lot (horse meat is actually much more common if you can believe that). I must say this looks delicious anyway and the video was great to watch thanks to the chef's soothing voice.

Osso buco refers to the cut of the meat as much as the recipe. She made lamb shanks. They look great, no need to try to be fancy in the wording for the sake of it... Oh she was on top chef? Go figure...

Definitely! It would have spoilt the whole thing. And not searing the meat... you're running the risk of boiling all the flavour out. That may be why she needs the harissa, but... if she hadn't put that on, she could have seared. Basically, she didn't do a single thing I've learned to do after 35 years cooking in the Med...

Great recipe. But i'm wondering why you should marinate the meat, because it's gonna cook low and slow anyway. :p Also no need to bloom the saffron, it's gonna bloom for about 20min anyway, while you cook the risotto.
She just dumped like $120 of saffron in that wine …

Watching her walk away from the risotto and prep the gremolata drove me nuts. Not continuously stirring risotto goes against everything I know.

Omg! So many comments but mainly. Too much saffron and you should infuse it into a warm liquid. Stir your risotto for gods sake And if you’re making an Italian dish surely it’s called Sofrito not Mirepoix. 🤦♂️

Come on dude. She only referenced her sexuality in passing, not to make some kind of statement. It’s not like she was shouting “I love women!!’” Every 2 minutes. Almost every chef on KZread tells little stories about themselves and if she’d said “I started cooking to impress a guy,” it’d probably go completely unnoticed. Also, as with every how-to video on this channel, the recipe is in the description.

THe recipes' there if you look. I don't like how she cooked this dish, but I loved the way she addressed us all so naturally and engagingly as she murdered the lamb... :)
