Interesting cooking method for the steaks. Steamed, then low heat, then brought closer to the high heat to reverse-sear. I don't know if I agree with "don't season while cooking" - seasoning meat does more than just make it salty - it also helps pull moisture out and changes the texture of the meat. Putting the salt & pepper on the plate isn't the same as seasoning before cooking. But, I'm used to good 'ol American grillin', not Japanese steak.

Amazing! Finally a teppanyaki that doesn’t cut the steak until it’s ready and let the juices flow out on the cooktop. This chef did a great job, looks yummy. Only issue is what about the salt?

He placed it on the plates, for the costumers to sprinkle according to taste. There’s also the bowl of soy sauce placed right next to it which the costumers can use instead of the salt. It’s good to have that option with every piece. Had he salted the stakes during cooking and that option would have been lost.

Last summer, i had the choice to visit either Tokyo or Rome. I chose Rome cause the flight there from Vienna was a mere 1,5hrs. It’s already 2 Months, that KZread shows me Japanese Videos such as this, about Wagyu Beef and Leather making professionals. All from Japan. Them Videos how they hand make Leather Jackets and them shoes. Diving deeper i see all that Technology going ok in Japan. Them vending Machines and their „drinking culture“. Long story short, next possibility i get, I’d defo visit Japan

I appreciate the chef didn't cut into the steak too much and allowed the juices settle. Only thing is could have seasoned it while cooking, but not a big deal.

Always very interesting to see how they prepare the meal, Thanks! I have watched a few videos about this, and it seems to be two different styles of doing it. Some are very noisy and tap the spatulas and everything against the table, and others - like this - are very quite and don't say anything or rattle the cutlery and the Pepper grinder and everything else you have. As for myself I prefer the quite style, but how would I know when I choose which Restaurant I visit? Cheers / B.

But to be fair it was super hard to edit in post-production - I only managed to take it down but not completely eliminate it.

I think he counted out the peppercorns. Sheesh. Put some on the plate. They are not a endangered Species/Spices. I don't know if the sukiyaki type steaks would be my thing. Not enough heat and the occasional dip in raw egg, then served. That sukiyaki looked better, maybe because no raw egg dip. Enjoying my mesquite smoked tri-tip, and smoked deer venison steaks. I also tried some mesquite smoked deviled eggs, which turned out delicious. Thanks AF, a excellent bite as always.

I think he counted out the peppercorns. Sheesh. Put some on the plate. They are not a endangered Species/Spices. I don't know if the sukiyaki type steaks would be my thing. Not enough heat and the occasional dip in raw egg, then served. That sukiyaki looked better, maybe because no raw egg dip. Enjoying my mesquite smoked tri-tip, and smoked deer venison steaks. I also tried some mesquite smoked deviled eggs, which turned out delicious. Thanks AF, a excellent bite as always.
