40년전 쯤에 이 가게는 아니지만 실제로 이렇게 국수만드는걸 본 기억이 나네요... 이젠 모두 없어졌겠다 싶었는데 이렇게 보니 어릴적 생각이나서 행복하네요~

옛날 추억이 나네요 국민학교 저학년때 저렇게 국수 말리는 것 지나가면서 많이 끊어 먹었는데... 짭조름한게 맛있었는데... 아련한 추억이네요.... 아직도 옛 방식 그내로 국수를 만드는 집이 있다니~

*Korean Traditional Noodle was a very luxurious ingredient 100 years ago.* Such machine manufacturing processes are shown quickly and simply to the viewer, but it was only 50~60 years ago in the whole history. Originally, the noodle was made only handmade by palace chefs (待令熟手) in Goryeo & Joseon Dynasty, deserved for whose royal family(王家) and nobles(士族), but it was only allowed during special events or holidays. Also, it only used a form of welcome or gift(下四品) in the palace because too much manpower was required. *In 1800, the technology of producing noodles developed and spread into private restaurants from Palace-chefs.* According to the record of Traditional Genre Art(箕山風俗圖), a Two-man organized as one team, one guy climbed the ladder and pressed the lever that squeezed dough when coming down. And the other guys squeezed- out it in the bowl that perforated with several holes. A thread shape of noodle comes-out outside and induces it into boiled cauldron water. *Family houses in the Late Joseon Dynasty have a private bowl that was made in Calabash and bored several holes, and used it.* Also, they used buckwheat flour, not white flour, because of high prices. Even palace chefs made noodles with buckwheat flour and served them to Kings. The critical disadvantage of buckwheat flour was easily broken in compared to white flour and resolved it mixed with starch powder. Therefore, the wheat flour noodles were exorbitantly expensive in Korean history and only eaten once or twice a year.

Takes 5 hours to make and eats it in a minute.... Very big process and great respect to the one making it. So much patience...
i use hand for kneading the dough till my hand twist 🤦♀️ this old machine can settle everything ..love it

I really admire the man-machine coordination, where machines are used to ease difficult tasks yet man remains in control and performs the more artistic function. I have it in Japan, Thailand and India. We used to do it in Europe before the advent of these giant / mega transnationals were established, making ordinary humans subservient to machines reducing them to baboons. Yes, there was a baboon, named Jack, in South Africa, who administered the railways crossing signal by hand. He was employed and paid pittance and half a bottle of beer every week. In 9 years, he never made a mistake.

천안에서 예전에 유명한 국수공장이있었습니다 바로 덕천 제면 공업사라고 ~~국수가 어느지방의 국수보다 맛있고 질좋은 국수였지요 지금은 그추억의 공장이 문을닫아 아쉽네요`~!! 지금 화면을보니 감회가 새롭습니다 국수한그릇 먹고싶네요
어릴때 엄마가 저녁답 되면 국수심부름 자주 시켰는데. 동네 국수방에 국수가 커텐처럼 차르륵 널려있고 국수가닥 사이로 바람이 솔솔 불던 그림이 가끔 생각나곤 합니다.

It is a privilege to see this. I use to buy freshly made pasta from Mrs Poggie's shop in Seapoint, Cape Town many years ago. Sadly the shop is no longer there, as they have passed on.
