I was working in hotel as a kitchen porter back in 2019 in September before COVID 19 and it was harder than it looked, pots and plates coming left and right floors needing to be mopped and certain parts of the kitchen need cleaning including the fridges and sinks, the work was hard but the pay was worth it.

It is not from the soap. It is from having your handd in contact with moisture for too long even when you are wearing gloves moisture seeps in and removes the protective layer of your skin revealing the itchy sensitive part of it.

He's right. If we (dishwashers) had to worry about not touching the mouth ends of cups, top sides of plates, or insides of bowl, it would be very hard to carry the dishes and it would slow us down. I personally keep my hands clean on the job so that I can do this. I'm not gonna speak for the guy in the video but I would hope he does the same.
