Man you are so lucky you have a machine to do the dishes where i work at my local hospital restaurant I have to wash all the dishes by hand as the dishwasher machine does not work it's been like that for months just wondering if any other porters have had similar problems I would love to hear from them.

@@morganalvarez5925 I had a similar experience. We did have a washing machine but wasn't very good. Sometimes had to go through a wash twice. We didn't have a hose so I had to wash everything by hand beforehand. I also wasn't aloud to wear gloves since the head chef wanted me to cook as well.

I’d rather be a kitchen Porter anytime than a Waiter, they are far more important to the Restaurant than a Waiter, in fact the only people that rank higher than me at my work are the Sous Chef and the Head Chef, the cleanliness of the kitchen is one of the most important jobs in any kitchen, nothing can function without a KP even the bar doesn’t have coffee cups or glasses, without a KP you are screwed, not sure why the KP is scraping plates either never seen that before in a restaurant it’s normally the waiter that does that

Very hard work in the real world you have to work much faster than this though especially in busy kitchens and you're often expected to be doing more than one job at a time.

Having worked in 3 places from a business to a hotel to restraunt, I can say this is a good job with a good wadge. But no matter how hard or how good you do the job including the dishes, cleaning, prep, bins, the chefs just do not respect any kps and will go out there way to be as mean as possible and moan about a little inconvenience or small mistake you do.

Since then I have been promoted to assistant chef, so yeah getting there! 😁 Edit: I spent so long in the kitchen that to be honest, my goals have changed. Now I’m trying to be a chef! The bartender job is still fun to do though, from time to time. I have a natural talent for cooking and I’m trying to put it to good use.😁

I love being a KP. I love my prep work so being the master of Sunday roast veg(from the u.k), other veg and basic prep(panneying, making puree's, recently moving on to doing stuff with pastry is great). Also helps the chef's know I love prep and like cooking, been here 6 months and they've offered me a role with plating up deserts(would have lead to starters also) which I declined as I love my prep work and I can't deal with all that stress with cooking. Sure the basic tasks like washing up and such are okay but they are a part of the job and need to get done.

Ok guys what if the dishwasher machine breaks down in a busy restaurant and you have to wash dishes by hand ? You have only one sink you are the only one doing the dishes and get no help. Is it unhygienic to wash loads of plates and cutlery by hand when there is only one sink to soak and wash ?

If the dishwasher breaks down you switch to the two-sink method. Soapy water in the first, items are washed clean. Sanitising solution in the second, items are soaked for a few minutes. Finally, they are left to dry. Service HAS to slow down, a chef may have to be diverted to assist you and if you only have one sink you have to use a bucket or large box.

@@PeteS_1994 100% mate, Of course you have to work at a good pace too but you constantly get overwhelmed on very busy nights but I agree the key is to be as organised as possible and prioritise jobs. The biggest problem is the better you are at the job and the quicker you are the more they will expect from you from my experience anyway.

Hi Franck, thank you for your interest. As a kitchen porter, your main duties would involve washing up, cleaning and basic food preparation. You would need to have good physical health, as you will be on your feet for most of the shift. You would also need to be good at working in a team. If you want an active job in the catering industry, this could be ideal for you. It depend, usualy, you work 37-40 hours per week but this may be more important if you are voluntary and motivated.
