Dear Yousef, in high school, my best friend was Persian. Her mom would make this stew for us when we came home from school. I am now in my late 40s and dream of this stew. Every time I order it from a Persian restaurant, it is not the same "homemade" taste as her mom's. Seeing your recipe, it looks exactly like the way she used to make it. I will try it and let you know. From my heart, thank you for this beautiful and amazing looking recipe!! I can't wait to try it.

I was thinking along the lines of Sicilian Caponata, this is definitely different, but fantastic! Looks great chef!

I am married to a very nice Persian man, I cook this Khoresh bademjan, it is delicious and I cook this in big quantity and freeze them. Except for tomatoes and eggplants which I prepare fresh and add into the khoresh every time we want to eat this delicious prepared dish. Thank you for all your cooking video.
