**RECIPE, MAKES A 9-10 in (23-25 cm) PIE**
For the crust
150-200g graham crackers
1/2-1 stick (2-4 oz, 57-114g) butter, melted (or 60-120 ml coconut oil for a vegan pie)
1/4-1/2 teaspoon (3-6g) salt, if using unsalted butter
1/3-1/2 cup (66-100g) sugar, I like brown sugar (white sugar + molasses)
ground cinnamon to taste (maybe half a teaspoon, very optional)
For the custard
3/4-1 cup (177-237 ml) lime juice
The zest of 2-4 limes (very optional)
5-6 egg yolks (or 1/2 cup, 118 ml vegan sour cream)
28 oz (3.5 cups, 830 ml) sweetened condensed milk (to make vegan version, combine 4 standard 13.5 oz, 400 ml cans of coconut milk and 1 1/3 cups, 230g sugar in a saucepan and simmer for about 45 min, stirring frequently - you might not need all of it, depends on how much it reduces)
For the topping
1-2 cups (236-473 ml) whipping cream
sugar (ideally powdered sugar) to taste
vanilla extract to taste
Pulverize the graham crackers as fine as you want them. Mix in a conservative amount of sugar, salt (if using unsalted butter), cinnamon (if using) and melted butter. The less butter, the more crumbly the finished crust will be. Taste and consider adding more sugar, salt or butter. Mold into a 9-10 inch (23-25 cm) pie pan, tamping it down smooth. Bake empty at 325 F (160 C) convection or 250 F (180 C) conventional for 10 minutes. Let it cool throughly before filling it.
Make the filling by mixing together the sweetened condensed milk, egg yolks and limes juice. If you don't want the pie very acidic, go with the smaller quantity of juice, and use only five egg yolks instead of six. You could mix in some of the lime zest now and reserve some for garnish later, put it all in now, or put none of it in now.
Pour the filling into the crust - it should look like not quite enough, because custard expands slightly when cooked. Bake at the same temperature as before for 20-30 min, or until the center of the pie has firmed slightly, but is still wobbly when you nudge the pan. Don't let anything brown.
(NOTE! If you're doing the version with sour cream [vegan or otherwise] instead of egg yolks, it won't need to bake nearly as long. I'd guess 10 minutes, max, until you see little bubbles bursting at the surface. It won't seem very set, but it'll set up in the fridge.)
Cool thoroughly on the counter before chilling overnight.
Whip the cream and flavor it with as much sugar and vanilla as tastes good to you. Serve the chilled pie with some whipped cream on top, and maybe garnish with fresh lime zest.

I lived in Lighthouse Point FL in the 70s. My neighbors had a key lime tree so. We used them in many inventive recipes. One of our favorites was to juice them and add about a cup of the juice to a bottle of Welch's Grape Juice. That was the most refreshing and thirst quenching drink ever!
I love citrus of all kinds so this is an automatic win. Appreciate when options are given and variation and experimentation are encouraged. Pro-tips for getting the most out of your citrus: To maximise juice yield, especially from limes or lemons, sit them in hot water for a while then firmly rolling them on a hard surface before cutting into them. Even if the recipe doesn't call for it, zest them anyway, freeze, dehydrate and even powder it for later use. Dried peels are not only a culinary delight in spice mixes and salt rubs but the volatile oils they store also make them excellent additions to bushcraft fire starter supplies or aromatic potpourris. Make candied peel from thicker zest strips or use for making marmalade. Preserve strips and any left over juice in salt like Moroccan lemons. More surface area equals more flavour, infuse fine zest in coconut milk/milk or cream before straining. Make smooth icecream with all that citrusy flavour without worrying about acidity, curdling or excess liquid. Infuse spirits directly or make cordials and syrups for summer quenchers or to liven up your cocktails. Get more use out of reamed lemon or lime halves by inverting them a little and sprinkling them with salt and/or bicarb soda to create an eco-friendly mildly abrasive cleaning aid for your chopping boards, taps and sink. It sanitizes, polishes and deodorises surfaces and can be composted after use.

I love your channel so much. It is a fantastic example that succeeding on large platforms like KZread is still possible if you produce quality content, and it isn't locked into "early creators". I love the variety yet simplicity of each recipe. I love the science based approach and the clean straightforward format. It truly has become my go to cooking channel on all of KZread.
So I just made your recipe of this and it might be the best key lime pie i have ever had, I especially like how you showed us how to actually gauge the doneness with more than just a fixed time because the filling turned out perfect: creamy, yet firm enough to not fall out of the pie crust. I used a pre-baked graham cracker crust which was both a blessing and a curse because it was thin and not very flavorful, yet that also let the filling shine more while giving crunch.
DUUUDE I was so happy at the moment where you didn't have key lime. Reminds me exactly why I absolutely love your channel. Keep it coming!

Why are you vegan tho? If you are vegan by choice, or you don't play with the animal product because of the way they are retrieved, sad news for your friend... You HAVE to eat meat and dairy (unless you have medical issues). Humans are omnivores, that means that we eat pretty much everything. But because we eat pretty much everything, we also, have, to eat pretty much everything. It's what our body was made to do. You need meat and dairy in your life. As of now, there are no good alternatives. Maybe before 2080, or as early as 2050, we might have actually good options.

How do you expect a vegan who has never ate meat to be tall, or strong? They have basically no proteins. It's near impossible for them to be fit. If they want to be fit or strong, they have to eat EVERYTHING. Meat, dairy, fruits, vegetables, water, sugar, oils, etc. We currently have no good substitutes for those things either. We have to wait at least a decade or more until better vegan substitutes. There currently is no way around it. I really appreciate how you suggest alternatives for dairy and gluten occasionally. Recently discovered sensitivities to gluten, dairy, eggs and about a dozen other odds and ends like avocado and strawberries. I’ve had to relearn how to cook as *all* my old recipes are now off limits, but feeling better has been nice.
Hey man! Tried your galette and it was delicious! 100% going to make this as well! Love these recipes!
Really appreciate the notes on how to make these vegan. Omnomnom!
Gotta say: REALLY appreciate the nod to people who don't eat animal-based products. Thanks a lot, Adam!

@@thatone846 yes, but not exclusively. You could avoid any animal based products because of health issues and not be a vegan, for instance. Veganism goes more on the philosophy and ideological side, not only "dietary"
I’m making this for my moms bday in may. This is her favorite pie. Thank you!
I tried this, it was absolutely delicious! You're right when you say salt is great in a graham cracker crust. Only change I made is I was able to get away with using only 4 eggs and less condensed milk, but it still tasted great :)
Made this for my fiance and she loved it! So did everybody else who tried a slice, so thank you so much! Just need to remember to take my lactose intolerance pills before I eat it next time... Was rough afterward. Worth it though.
I made this pie using real key limes (managed to find some at a local grocery), and if you are having trouble juicing them because they’re so small, I was able to cut them in half and use a garlic press over a fine mesh strainer to get the juice out. Don’t press too hard or the juice will fly everywhere except the bowl you’re squeezing into
Really cool that you added tips in there to make this recipe vegan. Appreciate it a lot!
I absolutely love it! and really thanks for all the vegan options!
I'm a Floridian who is a avid fan of homemade key lime pies. I honestly don't blame you for not wanting to used the bottled stuff. A persian lime might not have the same type of zesty tang a fresh key lime does but it at least has a freshness to it compared to the bottled stuff.

Key lime pie is my absolute favorite, can’t wait to try out this recipe
My absolute favorite desert but never tried it with Persian limes! So I’m super excited to try this!
"Be gentle with a ceramic pie pan" Speaking from experience, Adam?
Glen on youtube made this with the oldest recipe available, very cool video I recommend it. Also nice vid by you too adam!
I watched this video 3 times until finally making the pie myself and it was FANTASTIC. I’d recommend 1 to 1 1/8th cup lime juice and zest of 5-6 limes to make it really limey; just the way I like it. But the original recipe from the video is a really good, creamy, fairly sweet pie with a subtle lime flavor.
LOVE key lime pie so THANK YOU!
Can we just apreciate how much effort he puts onto these recipes? He even put a recipe for vegan condensed milk
Just made this (substituting American graham crackers for British digestive biscuits) and it turned out delightfully. Great recipe Adam!
This looks magical
The title lured me in for sure..Im highly critical of youtube vids but yours is well done…great voice, editing, pace…just the right amount of humor for this type of thing…excellent my friend!

Ooh, this looks delicious! And I really appreciate the vegan tips, too - both for my vegan friends, and for the next time I can go to a potluck with my friend with an egg allergy and my other friend with a milk protein allergy. I'm usually the dessert person in our group, so this will come in handy 👍
