These thick, soft and chewy Strawberry Cream Cheese Cookies are creamy, strawberry melt in your mouth goodness. It’s like eating a strawberry cheesecake in a cookie form. A perfect treat for the spring and summer ahead!🍓🍪 😋
INGREDIENTS
1 ½ cups (150g) blanched almond flour
⅓ cup (37g) coconut flour
⅓ cup (65g) granulated erythritol
1 ½ teaspoons (6g) baking powder
1 cup (180g) diced fresh strawberries
1 tablespoon (15mL) lemon juice
1 tablespoon (12g) granulated erythritol
4 ounces (112g) cream cheese at room temperature
⅓ cup (76g) salted butter at room temperature
1 large egg at room temperature
1 teaspoon (5mL) vanilla extract
¼ cup (40g) sugar-free chocolate chips (dark or white chocolate chips)
Bake at 330°F (166°C) for 30-35 minutes.
Yields 20 servings (macros per cookie)

Dear K one more delicious cookie to the collection. Thank you again. Right away my brain lit with ideas how to make this as you know I can’t use freely almond flour, but little by little I experience with combinations of flours, not bad so far although not perfect. With this I would rather white chocolate chips. Yours look beautiful and perfect 👌

Now here's a story...my Daughter has bringing the leftover cookies from work on the nights she closes and I'm absolutely addicted to the Raspberry Cheesecake Cookies but they are not Keto. ;( So, these would be an indulgence. I made them!!! And I didn't leave anything out!!! Lol. Yay, they are so yummy and Delicious. The strawberries make them almost muffin-ish. (That's how my daughter explained it.) They will be a go-to cookie for us. Thanks again.🥰🥰🥰
