Keto No Bake Cheesecake | Carnivore Cheesecake options!| Celebrate Keto Blueberry Cheesecake Day!

In this video I made keto no bake cheesecake with lemon and blueberries! May 26 is National Blueberry cheesecake day. Why? Who cares, you get to eat keto blueberry cheesecake so just go with it!
I omitted the blueberries and used glycine to slightly sweeten my own carnivore cheesecake portions which I froze in small jars for myself.

Ingredients (see below for links to ingredients):
• 4 packs (8oz or 250g each) cream cheese
• 1 cup heavy cream
• 1-2 tbsp glycine (or Swerve for keto)
• 4-6 packets True Lemon crystals
Combine all ingredients and put into 7 inch spring form pan or in 10-12 individual portions (I use small jars. Use with or without optional carnivore pie crust (below). Chill 4 hours or overnight. Top with unsweetened whipped cream.
Ingredients for optional keto carnivore pie crust:
• 1 cup pork panko (or grind your own: • 3 Ways to Make Your Ow... )
• 1 tbsp melted butter
• ½ tsp cinnamon
• 2 tbsp glycine
Combine all ingredients, press into bottom of springform pan, bake 10-15 minutes until edges are brown.

    I have to tell you that I made this last night! My sons girlfriend was celebrating her birthday and I made this for her birthday cake. I kind of struggled through the recipe but made it through, lol. My Crust looked like it was an Oreo crust and not that beautiful and brown crust like yours, but I used it anyway. I used lemon juice from a bottle and I used half a cup and it gave it a nice hint of lemon ! The blueberries and whipped topping made it really taste good and everybody enjoyed it! Just had to share that with you! Thank you very much for what you do for us!

    When I made cheesecake in my pre-low carb days, I made a different crust than usual as I don't like graham crackers. I just replaced the standard graham cracker with ground pecans which is a tasty option for Keto or low carb.

    Do the opposite ..take out your cream cheese and put immediately in your bowl and warm on the counter. That way you don’t lose any to the package.

    I made this using Allulose as a sweetener. It worked well. If I make it again, main change I would make would be unsalted butter with the pork panko. I also would add some Allulose to the crust. Bought strawberries 🍓 for the first time in years. It was quite the treat. I used parchment square inside an 8 inch glass baking square and it worked beautifully for our at- home consumption. I put some in the freezer for future use. Thanks Anita for this excellent recipe! 🎉

    I never thought to use pork dust as a crust. I love that your recipes are not complicated. Must try that crust for my next cheesecake. Glad nobody was hurt with the toppled lampstand. Keep the bloopers coming. They make your videos unique.

    I love this recipe and I thought I wouldn’t like the crust since it was made with pork panko but it was delicious and added the crunch crust that I like with cheesecake. A 10 star recipe for me!

    When I heard your oven go off, I jumped up to check my washer/dryer without given it any thought. They don't even sound the same.... I used my hand mixer when mixing softened cream cheese and ended up having to replace that dino with an awesome new one. 😊

    I used to make this years ago without a crust or sometimes with a nut crust. I like it much better than a baked cheesecake. I'm going get some monkfruit. It doesn't raise blood sugar like some other sweeteners. Good job

    Just a couple things I have learned since making it here for the first time! If the cheesecake sits over night the crust is nice and soft rather than a little crunchy. And I didn't use enough sweetener in this video to that crust, I would 1-2 tbsp more!

    With the crust, I found that the next day it was soft like a graham crust, when it first came out of the oven the pork rinds were still a bit crunchy. So keep that in mind if you are a texture person. Plus if I was serving it to guests (which I have!) I would sweeten the crust more with some brown sugar swerve, then it tastes a lot like graham crust!

    My kitchen is not useful for cooking/baking at the moment but I am going to try this after I move and your birthday cake too. I bought pork rinds today and I just don't know if I will ever like them just to eat but I hope they will taste better in this recipe. Thank you for your carnivore recipes but I really lost my sweet tooth on this life style change and I hate to pay so much for a bit of sweetness so desserts will be for after I get my diabetes and weight better.     You can grind the pork rinds and use them to bread chicken strips and shrimps instead! I don't have much of a sweet tooth either and have all sorts of items sitting in the freezer but I figure they are there in case I need them!

    Thank you for your reply I was able to add stevia and I used lemon extract instead of lemon crystals and it’s been in the fridge and I also just placed it in a pie dish and I will serve tomorrow to my husband with strawberries for him and blue berries for me and I will also do the whipping cream with sugar… thank very much I really enjoy your videos…

    I just made this! it was amazing, thank you so much for my new favorite cheesecake crust! Pork Rinds..Who would have thought? I didn't even bake the crust because its just too hot to run the oven and it was perfect anyway :) I halved the recipe and used swerve because I had none of that other stuff..and it made 4 perfect hearty portions, I could easily get 8 out of it. I used orange extract and popped a few SF chocolate chips on top for that orangy chocolate taste I love. Rich and decadent, better than Rebel ice cream and better more wholesome ingredients

    It is definitely not something you would eat every day, this is a once in awhile treat. Most cheese does have a little carbs as does cream. Also check different brands as the carb counts do vary.

    I know I'm a bit late to the video but using the brown sugar swerve gives almond flour the graham cracker flavor so I would bet it would do the same with the pork rinds. I'll be making some cheesecake this weekend!

    I'm eager to try that crust. I just don't like nut crusts and breads. I made a baked cheese cake once in a loaf pan, using almond flour crust and that was the part that didn't get eaten by anyone.

    @@KetogenicWoman Have you tried glycine instead of allulose in the PSMF bread? My husband won’t eat allulose until he’s reached his fat loss goal.

    You got this! It is so important to get off sugar. Just find any powdered glycine, that's what I did. No other ingredients, just glycine in powder form. And don't overuse it, just a tiny scoop to taste. Eventually you will want to learn to live without sweets but for now this can help you to transition.

    The look is amazing! Can you try dairy free version? I think that is possible with gelatin and merengue and like frosting in the top with lemon gelatin too, what do you think?

    Ok so I made this cheesecake and it is yummy. Things I learned. Use hand mixer not counter mixer not enough control and mixture gets stuck at bottom too much and in the beater. Never got super fluffy like yours. So hard to spread. Also next time will warm cheese unwrapped in bowl. I was exhausted 😅. But it tastes so good. Hand mixer to the rescue. 🎉

    When I was Keto I sued to make a nut crust. I would also imagine you could make a crust with meat flour, or dried out egg white bread crumbs. Just bind with butter and press into a pie pan.

    Yes, I used to do nut crusts but can no longer tolerate them! But if you can do them, they are delicous!

    Hey, have you ever tried making a crust for carnivore people with Wendy's Power flour? I have been trying to figure out how to have SOME dessert stuff but mostly carnivore friendly if at all possible. I find "keto" baking is NOT at all like with regular Wheat flour. I baked all the time and wasn't afraid to experiment but Keto is definitely different, I look for recipes that have been tested :)

    I have made cookies with the power flour but nothing else yet. As for cheesecake I actually prefer no crust but I get that sometimes you want a crust especially if serving to company.

    I haven't really compared glycine and allulose side by side. I use very little sweetener, so to me 1 tsp of either of those can do the job whereas someone else might need a couple tbsp. I feel like glycine might be sweeter than most sweeteners.

    I didn't but I liked it soft when it came out! When it came out of the oven it was too firm. I actually make cheesecake most often without a crust but I thought the pork rinds were worth trying!

    Thanks for the video :-) some good information. Also appreciate the other peoples comments for example using ground pecans. I do wish that the multiple channels promoting healthy recipes would stop heating things up in the microwave. It’s pretty common knowledge how microwaves destroy the goodness of the food and, shouldn’t even be standing near never mind eating what came out of them.

    I keep looking and asking for studies on this but never have been answered. Do you have a study by any chance? Many untrue things are 'common knowledge', for example it is common knowledge that red meat will kill us but yet here we are. I am not trying to be difficult, I honestly want to read something legit on this, not just opinions.

    Awesome 💜 I have a question for you as a new carnivore… I don’t know if cheese is good for me continually. But as a treat I think this is awesome. My question for you is the pork Rine crust would you add that to the little servings that you put in the fridge and freezer? And what did you think of the new sweetener do you think it affected you as a carnivore?

    You can certainly add the pork rind crust to the little jars, just put a spoonful at the bottom of each jar. I don't bother with it myself. I rarely use the glycine because that's just the thing I don't really know what a safe or good level of use is. For a once in awhile treat I am comfortable with it. It doesn't cause cravings in me or anything like that but I think overuse of anything like this is a sign of trouble!

    ​@@KetogenicWoman Glycine is the most common amino acid in gelatin (30%) so small amounts of it are certainly not dangerous for anyone that has no issues with gelatin

    I do my cheesecake in muffin tin with liners, then transfer to air tight container. Just like you I could eat the whole cake in a few days if I see it in the fridge! Nice recipe I did not know a no bake recipe, without eggs. Wondering if you stabilize your whip cream somehow, you mentioned serving later. I would like to do ahead so I can clean up before guests arrive.. do you have any ideas for that.

    Whipped cream can be stored in the refrigerator, in a colander lined with cheesecloth or a coffee filter and placed over a bowl . This allows any liquid to be removed that would deflate the cream.

    I've never used a stabilizer, I just try to make the cream the same day I plan to use it. In the frozen portions it works great.

    I don't count macros, sorry. But it's a good skill for you to develop because when I first started and WAS counting I found that many of the nutritional info cards were wrong. There's only a few ingredients in this recipe, just put the whole recipe into carb manager or some other free app like that, divide by how many servings you cut it into and you will have the info you want. Do this even when you are provided the info because only then will you be certain it's right.

    They are hard to find in the stores (at least here). They should be with the canning supplies but they are called Ball Storage Lids and now that I know they exist I just get them online. You can get them for any size of mason jar, this is what the box looks like: amzn.to/3igJCKR

    Yes, you can halve the ingredients. I normally just make a small 7 in cheesecake.

    To be honest, I prefer crust free! For those that really want a crust though, you can certainly make one using almond flour and butter or even ground nuts and butter. I no longer do nuts and feel the crust is not worth the carbs!

    I went to Amazon to purchase glycine powder, but they all say unflavored. Does that mean they aren’t sweet? I can’t find a powder that claims sweetness on the description. What am I missing? I’m very interested in it because I’m carnivore and have cut out all sweeteners. I’d try glycine since it works to help build muscle and other tissues. I need help regrowing a torn ligament. 🙌🏽

    They do not have sweetener added, they are just naturally sweet! So the unflavored ones are the exact ones you want!

    I personally use no sweeteners these days. If your question is 'is allulose a carnivore food' then no it isn't. But I think people need to make their own decisions about what can carry them through this journey. I am not trying to be strict carnivore, I'm just trying to be healthy!

    I'm not sure but I would put a couple tbsp butter into a bowl and keep adding whatever powder you are using with a wooden spoon until you have something you can press into the bottom of a pie pan! @@HinckleyHomestead

    No not the lemon crystals. You might be looking at their lemon drink mix? Two different products. The True Lemon crystals contain: Crystallized lemon, citric acid, lemon oil, lemon juice. Hope that helps!

    Well, the real hard core carnivores do not eat anything that is not from the animal kingdom, the meat and water only people. Many other carnivores do allow things like coffee, seasonings, a little sweet here and there. Sometimes I just like to see how close to carnivore I can get. Yes, glycine is sweet. I don't do dogma and rules, this is a forever thing for me so sometimes I just make allowances and refuse to feel guilty for that. PS I have also lost 135 pounds by being nice to myself!

    @@KetogenicWoman the exact opposite of vegan. Wow...anyway quite interesting. You know, for every lifestyle there is a way to make a dish similar to the standard one. I once chose to eat as a vegan for a year. It's wasn't because of the philosophy of not eating animals, but for self sustainability. I couldn't get my A1c and cholesterol under control with that lifestyle so I went to low carb. That did the trick. I like knowing about other lifestyles and since I dont follow rules, I think this recipe is easily adapted to my lifestyle. I'm sharing these tips with other communities just to give additional choices to make cheese cake crusts.😇 I just found your videos and am binge watching yours and other carnivore videos.

    @@KetogenicWoman congratulations on your weight loss. I lost weight very slowly but never gained. Every now and then I allow myself to eat carbs. I just dont continue the next day. I lost tons of weight recently due to illness. I couldn't eat at all but it taught me that I seriously need to cut calories. What's the carb count on glycine.

    The link you posted for Glycine is not the same brand you are using in the video. It is an 'unflavored' product, which apparently doesn't provide any sweetness. ?????

    Mine is an unflavored product as well. Glycine is naturally sweet and should only contain glycine, no additional ingredients. The products I use are Canadian and sometimes when I provide a link, Amazon will sub in what they think is the closest thing if they don't have that one. Just choose any glycine that is 100% powdered glycine.
