大米 300克 rice 300g
清水 200克 water 200g
砂糖120克 (可按你的喜好增减)sugar 120g (adjustable)
低筋面粉 50克 cake flour 50g
速发酵母 4克 instant yeast 4g
开花发糕的关键是:The key of the cake is:
1. 米糊一定要发酵至二倍以上 Rice paste must fermented to more than twice
2. 提前将蒸锅的水烧开 Boil the water in the steamer in advance
3. 装入模具前需搅拌将气体全部排除 Before installing the mold, it is necessary to stir to remove all the gas
4. 装入模具至少9分满以上 Put in the mold for at least 90%
5. 水开后上锅大火蒸30分钟 Boil the water and steam over high heat for 30 minutes

    Making cakes with soaked rice will be more delicate. You could put in the refrigerator. It will be easier to take out the rice cake if you brush some oil on the container in general, however, my containers worked without greasing the cup.
