Steamed Rice Sponge Cake 用大米做的开花米糕 无泡打粉 只需简单几步 保证个个开花
I love rice cake, various kind of rice cakes. Today i want to share one that made out of rice, yes, the rice that we use to cook RICE in the rice cooker instead of rice flour sold in store! After steaming, the top naturally cracked open and very soft and yummy:)
📝 Ingredients
500g White Rice
300g Water
5g Instant Dry Yeast
60g Sugar
100g Flour (may have extra left)
* Proofing
Rise at room temperature for ~2h till bubbles shown on top and size more than doubled.
* Steaming
Steam 20 mins at HIGH fire and leave covered for 3mins before serving.
📢 Tips
* The key of make this rice cake is to add flour till reach the target thickness. The amount depends on your rice type, rice batter thickness, and flour type.
* Make sure steam at high fire.
* Make sure the container are filled full with the cake batter. This will help the growing and crack on the top.
我特别爱吃各种中式米糕, 今天继续分享一款用大米做的开花米糕, 个个开花, 不用泡打粉。 这款米糕和之前用纯大米做的米糕相比, 口感会浓密一些, 但是很松软, 主要是做法非常简单! 喜欢米糕的朋友不要错过哦!
📝 食材
500g 大米
300g 水
5g 即发干酵母
60g 白砂糖
100g 中筋面粉
* 发酵
室温发酵约2小时到体积膨胀到2小时以上同时表面布满气泡。
* 蒸制
大火蒸制20分钟关火焖3分钟再出锅。
📢 小贴士
* 做这款米糕最重要的一步就是一定要慢慢加入面粉达到需要的浓稠度即可停止。 我给出的量你可能只需要30g, 50g。 因为每个人的米浆浓度不同, 大米不同, 都会又影响的。 不变的是最后面糊的稀稠度。 记得看视频中的稠度哦!
* 一定要将面糊倒满, 用的容器不要太深, 我视频这次用的有点点偏深了, 浅一些的有助于开花!
* 全程一定要大火蒸哦!

如果蒸之前,在杯子里米糊中放一些馅料,比方放叉烧肉,那么蒸出来的就是叉烧米糕了!可以开店卖糕了。

What type of raw rice used? Any brand? Thai jasmine rice or hom Mali Thai rice OK?

那就要缩短时间 看到体积两倍以上 然后表面有小泡即可

亲 视频里面重点强调了 小贴士也写了哦 大米米浆每个人浓度不同 面粉用量35-100g都有可能 但是不可能多于100g 达到浓稠就停止加入
