    Subscribed immediately and binging all 22 episodes of Jaques and Julia. This is like Church for a Chef. They're so casual but two of the heaviest hitters in culinary history.

    They really are. They totally beat the chefs you see on TV nowadays. Today it’s all about money and being a celebrity. The two of them didn’t care about being celebrities. They wanted to cook, and show you different techniques when you’re cooking something

    No one but Jaques Pepin could have, by this time, recorded a cooking series with Julia, she respected him, tremendously, while an icon and national treasure, a pioneer in her early pbs days by this point Julia really had become an irascible, cranky, opinionated prima Dona, she adored Jaques even though he'd tease her and pick at her rigid idiosyncrasies, eg: white pepper, no garlic, nothing spicy....... Jaques: puts in 4 drops of Tabasco to a sauce Julia: ooh! That's got a kick !!

    It does not get any better than these two masters. I'm so happy that you have brought back all these episodes. I just have no interest in others.     You can cook that same cut of pork to 145 nowadays.

    Realistically, you could have then, too, but Julia was of the generation (a bit older than my grandparents) that felt that you needed to turn pork into shoe leather in order for it to be safe, even if trichinosis stopped being a real threat decades earlier; my grandmother was the best cook I've ever known, except when she got her hands on pork chops. I think I've still got bits of them stuck in my teeth, and she died over 20 years ago.
