Jaques Peppin is a master chef. He makes TV cooks like Bobby Flay, Rachel Ray, etc. look simple.

I use ice to separate broth from grease. Ice works great, the grease attaches its self to the ice.

Julia and Jacques were one of those unlikely couples, so different that they would have never connected had it not been for their common approach to cooking.

Buonissimo. A me piace il pollo cotto con un po' di sangue rosa nelle coscie. Ti giuro che ha un sapore eccezionale. Dal Paraguay ❤

I remove the wishbone after it’s cooked, which I find much easier. It can be a pain to pry it out raw.

Washing chicken or any poultry is foolish. Nothing will survive a 325++ degree oven, and all you are doing is praying nasty water all over

Why would you not wash it? It's so easy to get salmonella and you don't know how clean the chicken is originally. We use a water solution we soak it cold water, a bit of white vinegar, a bit of salt, and lemon juice.

Sounds like you don't clean your sink afterwards. Also not everyone roasts their chicken. Steamed chicken exists.

@@AngelusBrady We do along with all surfaces. I'm not sure why you would make that assumption. Most people do roast chicken.

@@FayesFood I was actually replying to PUNKem733. But for some odd reason KZread comments don't tag the original poster and doesn't have an option to let you do so. And yet replying to a comment under the original comment it allows you to tag the other person. It's weird and it can get confusing.
