This marinated Japanese mushroom recipe features a medley of shimeji, maitake, and nameko mushrooms, but it can also be made with wild or cultivated mushrooms like button, cremini, shiitake, or portobello. It's an easy and versatile make ahead dish that's perfect for home entertaining. I'll show you how to saute the mushrooms before marinating them overnight in a tangy, sweet pickling brine. Serve these on crostini or salads, stuffed into sandwiches, or as a side dish for roast meats and seafood.

    I first thought you'd simply use soy sauce,sugar,rice sake and mirin. Unique choice of seasoning,herbs and spices! I'll probably put a pinch of coarse ground black pepper on this dish😋.

    I think it's the acidity and umami, the texture is different but the aroma is a dead ringer for a burger with hamburger sauce (ketchup + mustard + mayo).

    i just used the last of my rice vinegar, but i will get some asap to make this!! i love marinated mushrooms but have never tried to make my own. do you think it would be possible to use canned shiitake if i dried them off well before sautéing + marinating?

    Dried shiitake wouldn't not work, but I don't think it would be ideal. The reason is that dried shiitakes (and most dried mushrooms) have a very strong flavor that would overpower the taste of all the other mushrooms. This doesn't have to be made with Japanese mushrooms, works with button mushrooms, creminis, porcini, morel or really any fresh mushroom.

    @@NoRecipes thanks for the response! i actually meant the canned ones in juice, just towel dried off before sautéing :) i have a lot of canned mushrooms in the pantry i always like to find new uses for!

    Speaking of mushrooms, shiitake ones are utterly ridiculously expensive in my country. Only dried ones are affordable, fresh ones are ... 😅

    Sorry, I asked my mom and she said that dehydrated shiitake mushrooms taste more delicious than fresh ones (and way cheaper). 😅
