I would think that too but remember Japanese rice is much more glutenous and you need much much less to get full than say basmati

Not entirely true. Some Office buildings in Japan have restaurants on the higher floors, meant for the employees (but also open for the public). These restaurants are not too costly and can still offer a nice view.

I think I’d like the Osakan interpretation more. Mushrooms are life. Interesting how he didn’t pour the soy over the rice; instead, letting it reduce first before folding the rice into it. Now I want fried rice.

I can't tell the difference between diced white onion, ginger and/or garlic when added. Am I missing something? Would like to see a flash of ingredient/liquid to identify as added, otherwise great video to watch. Thank you. :)
