    Normal sushi lunch is 5,000 Yen (USD35). Special sushi lunch which we had is 7,500 Yen (USD52). Please bear in mind that the nature of Omakase is that the menu is not fixed and is up to the chef and according to season. Dinner price is higher. Can call Fukagawa Restaurant at 075-211-0238.

    If saucing something like Maguro/Tuna nigiri, you should either use a bottle to carefully apply droplets of sauce onto the fish, or apply with a brush or sauce the fish before adding to the rice. If you simply pour sauce onto the fish like it is being done in the video, the sauce will get onto the rice underneath and can cause it to fall apart when picked up. Not a "master" from what I see. More knowledgeable and skilled than many, but not a master.

    Not everyone is a sushi master. There is a mutli-year apprenticeship before you get awarded that title by an official governing body.

    You made a mistake. In the video, the technique of Yubiki (Scalding) the fish skin with hot water, is not being done on Sayori/Needlefish.

    A) "hand gloves" is redundant as you never wear gloves anywhere else than on your hands B) wearing gloves all day will severely irritate your skin as sweat cannot evaporate. Also you won't have sufficient dexterity for such delicate work, and they freakin' wash their hands frequently, so proper hygiene is taken care of for crying out loud!

    If you use a rice cooker, the bottom and sides of the rice will always be burnt. That's why it's scrapped off. You should try using a rice cooker to cook rice without burning the bottom.
