    I'm in love with everything about this. The etiquette and the systematic way of doing things. Everything is super clean, white and orderly. The chef is so clean, well groomed and polite. I like the stiffness about him and how he does his work so very meticulously! I love watching his nimble fingers work; smooth, fast and effortless! It's an art. I'm sure the sushi tastes great!

    I know I have always loved Japanese people for their discipline..the rules can sound intimidating to many but it's actually so calming when you're putting all your senses to the present moment and only then you can enjoy to the fullest.

    honestly speaking, I LOVE SUSHI and SASHIMI of japan. the taste is good. the chef is polite and clean. he is also approachable to the costumer if the have some allergies to avoid itchy to their body... how i wish someday i can be your apprentice in your restaurant. it is the great honor for me.

    Very simple and nicely done. I recently had Omakase style here in the states and I think the chef had fun handing me different things. I loved the bit of wasabi under the fish in the nigiri. It needed no additional soy or wasabi. I can't wait to do that again!

    I like how he was so thoughtful of the customer, asking about dislikes and allergies, asking whether she wanted to continue or stop. All around seemed as a nice guy. Can I ask where in Japan is Sushi Aoki located? I'm travelling there next year, and I don't know yet where exactly I'll be going.

    I really love that you made a proper and professional video :) I'm really glad that it's okay to use my hand while eating sushi. I can use chopsticks but I might do it a bit wrong since after a short period my fingers start to hurt and it's difficult to hold the chopsticks like that.

    I am so surprised, I didn't know you can eat sushi using hand instead of chopsticks (in the sense that it's allowed). Sometimes the pieces are huge and awkward. Beautiful video, makes me want to experience the cuisine in Japan. As others said before me, it's very clean and calm and professional, I don't like crowdy and noisy places to go out to eat.

    actually, izakaya style can get crowded and busy but the food is yummy! ... it is a really good place to go in the evening with coworkers.

    It’s considered appropriate to eat both nigiri and rolls with either your hand, or chopsticks. It doesn’t matter. Sashimi must ALWAYS be eaten with chopsticks though.

    The proper ways is actually using hand. If a sushi chef see you using chopsticks then he will hold each sushi somewhat softly to prevent from crumbling.

    ROFL have been to Japan four times and I am still watching videos on the proper way to eat sushi. Most of the stuff I knew but I always used chopsticks for anything other than the rolls. There is a lot of mediocre sushi out there but if you hit the right place with good sushi it is an experience to say the least

    Amazing! Wish i had seen this video before i went to the sushi place with my buddies yesterday. I didnt know that sushi was supposed to be turned sideways before dipping it in soy sauce. for some reason i always dipped it facing downwards in the soy sauce and then stuffed it in my nose.

    From the etiquette point of view, does it make a difference between eating with your fingers or chopsticks? Are chopsticks more "exotic" or anything like that?

    I also like to have regular self service sushi with ponzu and think it very appropriate, but wonder why it's never an option alongside the normal soy satchets.

    Excellent video! What I would like to know though is if the chef would be offended if a customer decided to add some wasabi or some soy sauce to their sushi? Also, what happens in their restaurant that offends them the most?

    Thank you for your comment. In the formal way to have sushi, you'd better abstain from adding more wasabi and dipping too much soy sauce. Eating just a sushi topping without rice is the most offened because that can not be considered sushi anymore. We hope these ideas would help!

    If you live in america though, it's good to keep in mind that many chefs do not add wasabi to the sushi. It can be hard to tell whether the chef intends for you to add wasabi the first time, but it becomes clear pretty quickly whether they expect you to add your own

    But what about sashimi? In lots of cases sashimi is basically eating a topping without rice (for example salmon sashimi as opposed to salmon nigiri)

    You can't group sushi and sashimi together, they have their own way of eating. You have to eat sushi/nigiri with the rice. For sashimi you add a little bit of wasabi on top of the fish then you dip it to the soy sauce. If the fish was too big then you have to fold it using your chopstick then dip it to the soy sauce.

    Eating is something you do with your mind and your senses. So nice approach of asking to turn off cell phones and not use any cologne. Not that it would be offensive but it takes away from the experience.

    The sauce he slightly puts on the sushi before serving is Nikiri blend of soy sauce and mirin (sweet sake for seasoning). This is how to enjoy Edomae-style sushi!

    Actually you need to add Japanese sake to make it perfectly. Find your answer below and we hope it will suffice! A) soy sauce : sake : mirin = 8 : 1 : 1 Boil sake and mirin first, turn the heat lower, then add soy sauce, skim the scum if it comes out, turn off the heat before boiling again and cool the sauce to serve.

    She was probably intimidated by the whole Japanese vibe, the perfection in everything and his stiffness. I would be. In the midst of all that cleanliness and perfection, her hair kept coming to her face while bending her head to eat and it just made me cringe.

    It actually seems logical to me, if you dip the rice it would soak up the soy sauce and overpower the often very delicate flavor of the fish.

    @@0x777 the moisture of the soy sauce will also cause the sticky sushi nigiri (nigirizushi means hand pressed rice and refers to the rice under the slice of fish, prawn etc) to become unstuck and fall apart into individual grains, leaving your plate looking like a child ate from it. Very messy and embarrassing.

    These strict rules are more for more traditional sushi places. By extension, such sushi places would not serve such rolls, as they are not traditional, and hence the question is a moot point. More practically, depends on the quality of the roll. A good roll with proper rice and technique should be fine either way, but if the rice doesn't hold together well, it might be messy to eat with your fingers.

    Sixty five years ago a sushiya didn't have a "chef". Most of them didn't even have refrigeration, and instead were dependent on ice blocks covered with cloth to set the o0fferings on. Back then no one used hashi to eat sushi. It's sad to see modernization ruin tradition. People went to a sushiya to enjoy the food not to be lectured on how to??
