Katsu curry is a staple in Japanese cuisine and is incredibly easy to make at home. This Japanese-style curry is more sauce-focused and served alongside either a cutlet (katsu) of chicken or pork. In this katsu curry recipe, the katsu is chicken to make it more accessible and cheaper. Please enjoy.

Ingredients -
Chicken & Crumb -
2 - Large Chicken Breasts, Butterflied & Halved
2 - Large Eggs
1 tsp - Onion Powder
1 tsp - Garlic Powder
2 Tbsp - Plain (All Purpose) Flour
Salt & Pepper To Taste
150g - Panko Bread Crumbs
Oil For Frying
Curry Sauce -
1 Tbsp - Vegetable Oil
2 - Small Brown (Yellow) Onions, Small Diced
2 - Small Carrots, Peeled & Sliced
3 - Garlic Cloves, Sliced
5g - Ginger, Peeled & Thinly Sliced
2 Tbsp - Curry Powder
1/2 tsp - Red Chilli Powder
2 Tbsp - Plain (All Purpose Flour)
1 Tbsp - Soy Sauce
1 tsp - Rice Vinegar
500ml (2 Cups) - Chicken Stock
1 Tbsp - Honey
Seasoning To Taste
Rice -
1 Cup (200g) - Jasmine Rice, Washed
1 1/4 Cups - Cold Water
Salt To Taste
Method -
Place a large saucepan over high heat. Add the washed jasmine rice and water and bring to a boil. Reduce heat to low, cover and cook for 12 minutes. Remove from heat and leave the lid on for 4 minutes. Remove and fluff.
To make the curry sauce, add the vegetable oil, onions, carrots, garlic and ginger to a pan over medium-high and sauté for 10 minutes or until soft, mixing regularly. Add the curry powder and red chilli powder and cook for 2 minutes.
Add the plain flour, soy sauce and rice vinegar and cook whilst whisking for 2 minutes or until thickened. Add the chicken stock, boil, and reduce heat to medium-low. Cook for 6 minutes or until reduced by 1/3. Mix through the honey. Remove from heat and blend with an immersion blender until smooth. Set aside.
In a bowl, add the eggs and whisk to combine. Add onion, garlic powder, salt, pepper, plain flour, and whisk to create a batter. Beat the chicken with a mallet or rolling pin to flatten it. Dip the chicken into the batter and then into the panko bread crumbs to coat.
Fry the chicken in 170.c - 340.f oil for 3 minutes on each side until golden and crisp. Remove and let drain.
Slice the chicken into thick strips and serve next to the rice. Top the chicken with sauce and dig in.

    I've had this dish once many years ago so I'm happy to see you make it. It looks so delicious! I love the idea of breading with a batter for I believe you drop all your spices to the bottom of the flour bowl with the flour, egg, bread crumb method. I know I will love it, thanks!

    I just made this recipe a couple days ago and it was sooo delicious. I’ve never been a fan of non-green curries for some reason but I finally picked up a bottle and decided to get over it and to make this recipe because it looked so yummy and comforting and it totally was!! Big hit with the family! I paired it with steamed broccoli and my only change from your recipe was just a tad bit of MSG to the sauce and I seasoned the flour for the pork with garlic and ginger powder (for good luck, you know?). Will definitely be writing this one down on my recipe cards ☺️

    @@ChefJackOvens I'm the sole cook in the family of two, and I feel like I'm stuck at a mediocre level -- I don't give myself cuts, and I use certain popular tricks but still dogged slow compared to your speedchopping. I mean, it's a lot of practice but still probably nowhere near as much as a line cook.

    I made it today. The gravy is really easy and yummy. Even better than the japanese curry cubes and healthier. I added in cabbage and potatoes. Took out e potatoes and some Vege before I blended e gravy. This gravy will be great for udon noodle too. Thanks for e recipe!

    By e way, I used mid Joint wings instead. In future I will just coat it with All purpose seasoned flour after dipping in egg since the wings already skin on. Using bread crumb is a bit messy for me and doesn't stick well but it does make it crispier

    The curry sauce is really a great base even for people who are vegan. U can add in lentils to make it a complete meal. I added in cube pumpkins and some cabbage then blend it before I add in lentils. So hearty and delicious! No honey needed!

    Hello from Japan. Panko is made from a special technique of electrifying a huge blob of dough with electrodes, (so it isn't cooked in an oven like normal bread) it forms a big blob of white cooked bread without a crush

    Let it cool completely, strain it back into the bottle and reuse up to 2-3 more times. Once done. Place it into the same bottle again and discard in the bin

    Air fryers are essentially convection ovens. Frying by definition means cooking in oil. Air fryer = marketing term. @@kotryna8188

    Is it possible to use olive oil as alternative to vegetable oil or is it necessary? The last time I tried frying with vegetable oil the polyunsaturated fats in it caused me to end up with a very serious flare up of guttate psoriasis, because of the oxidation of these fats raised at high temperatures makes it unsafe and leads to inflammation.

    Patreon is something that people choose to use to support me, I don’t ask for anything from anyone. Views have always been low at the start when I post since day 1. If I used bots, KZread would shut me down. Just to prove you wrong, I’ve retired my fiancé, living my best life and enjoy what I do working from home. I don’t need to prove myself to you. Sounds like you’re jealous to me. I’m a humble person and you talking like this is embarrassing for you. Grow up and care about your own life and not others so much, you might go places 😘

I've watched Japanese chefs cook this and they coat the chicken in flour before breading it. It helps the batter stick to the chicken. Nothing to do with western fried food. Get your facts right

    Maybe not as good but Costco has some frozen breaded chicken breasts already cooked. Microwave, place over rice and pour some packaged Japanese curry. Dinner in minutes excluding rice that I have in single serving sizes already cooked and frozen.
