Ingredients Needed:
Yukari Pickled Red cabbage:
- 1/2 head red cabbage, very thinly sliced
- 2 cups (480ml) rice vinegar (we need more)
- 1 cup (240ml) water
- 1 tablespoon (14g) salt
- 2 tablespoons (30g) sugar
- 1 tablespoon (8g) yukari
Insanely silky Curry:
-1/2 cup (110g) butter
-3 onions, julienned
-1 apple, grated,
-1/4 cup (6g) sliced/dried shiitake mushroom
-1/4 cup (25g) curry powder (ideally S&B)
-1 tablespoon (8g) garam masala optional
-2 teaspoons (9g) MSG
-1/2 cup (72g) all-purpose flour
-1 tablespoon (15g) tomato paste
-1 tablespoon (18g) honey
-2 tablespoons (23g) Worcestershire sauce
-1 tablespoon (14g) dark soy
-1-quart (907g) chicken stock
Pork Katsu:
-4 boneless pork loin chops (Get the good ones please I beg of you)
-salt to taste
-MSG to taste
-1/2 cup (72g) all-purpose flour
-2 eggs plus a splash of water
-1.5 cups (75g) panko breadcrumbs
-oil for frying

Japanese American here. Just subscribed because a Jewish American guy who knows how to use chopsticks and understands MSG created the best homemade Japanese curry sauce I've ever seen and practically made his African American camera man cry with the crunchiness of his katsu. I love America.
I just made this, and I honestly cannot even believe how good this was. I used to live in Tokyo for about 1 month next to a curry shop, and had curry there all the time, and this recipe took me all the way back. So so good, thank you Josh!!!

Made this for my parents a couple weeks ago after returning from an amazing trip to Japan. It was absolutely incredible but the one thing it needs is a kick of spice, I added a healthy amount of cayenne chili powder to get that perfect Coco Ichibanya taste

Josh, as an Asian, I just wanna applaud you for helping debunk the myths surrounding MSG! I mean, it naturally occurs in food like parmesan, seaweed, mushrooms, and tomatoes so a lot of people consume it on a daily basis without even knowing. And if I recall correctly, lots of the misconceptions and mistrust surrounding MSG stemmed from good ol' xenophobia towards Asian cuisine. So really, thank you so much!

It might sound weird but try pickling in a large french press coffee maker. It's super easy to push down so everything stays submerged and there's no plastic waste

If you're living in Japan though I'm sure whatever boxed curry paste you can buy is better than what most US stores would sell (not even mentioning authenticity)

MSG is just concentrated umami, Some dude thoguht: "what makes things have umami?" and extracted something from seaweed, now we have MSG. the myth started because of how easily it is to use too much(like food colouring) which can affect health ( a little exaggerated) but if you know how much to use it's just a great ingredient

Pro tip for the gluten free bros out there: crushed up rice chex and corn starch breading. Makes crrrrrrisssspy katsu. Need to use both, one or the other doesn't work well enough.

@@S0DAo Rice chex is a toasted rice breakfast cereal, you can crush it into coarse pieces and use like breadcrumbs. Other toasted rice products may also work.

I haven't had the pleasure of eating katsu curry, but I do love tonkatsu. I need to give this a try! I occasionally go to a Japanese restaurant with my adorable twin nieces and their father. The girls typically go for an udon bowl, but they'll also want to mooch a bit from the tonkatsu I usually order, because tonkatsu is awesome. I allow it, because it's usually a pretty sizeable dinner and I won't really miss a few slices of that big pork cutlet.

That crunch gave me goosebumps. And that sauce reminded me so much of gravy, just a perfect accompaniment to the katsu. And yeah I don't get the big deal about MSG. It apparently is found naturally in some foods, and what's more I used to see it listed in the ingredients to some brands and flavors of chips. Brilliant episode today JW. Thank you for this.
Yes papa! The recipe I have been waiting for I was in Japan for 3 years and would eat coco ichibana pretty much every day with tonkatsu and scrambled egg mmmm thanks excited to make this.

I made this today and oh lawd I'm in heaven. the pork was so crisp, even on the last strip that had been sitting in the sauce. the curry was delicious and silky smooth. I''ve got 2 more jars of that sauce in the fridge, I cannot wait to have them again.
This is one of my all time favorite dishes as well! I made it myself a few times but never thought about MSG, I'll be trying this recipe ASAP 🥰
I'm always a proponent of making stuff from scratch, but Japanese curry roux blocks are the way to go for this

Used to work in Japan in the food industry, can confirm. However a lot of restaurants will add certain ingredients to bring out the depth in flavor.

@@StUCaboose friend on mine taught me to grate an apple or pear, add Worcestershire to the near finished product and if you're feeling fancy, fresh curry powder into some oil to bloom before you add liquids.

This brings back major childhood memories. I would often go with my parents to a sushi restaurant where all the dishes were on a conveyor belt and one of my favorite dishes was the chicken katsu. Can't wait to recreate this recipe :)

@@ejosapplepie4846 For just the curry “sauce” it takes between 2.25-2.75 hours (depending on how familiar you become with cooking it).
The food god has answered my prayer. This is absolutely one of my favorite dishes. I have been waiting for him to do a version that is completely from scratch. Will be making this soon!

Cut resistant gloves are for pansies. We learn to operate such artillery the hard way, like real dumbasses(such as myself, as I have NUMEROUS scars on my knuckles and fingers proving my veteran status with a mandolin lmao)

From the sound of your cited video, it looks like he and his team were basically trying to avoid being cancelled in China. While I disagree with the move in general, I understand his motivation. I'm willing to give the benefit of the doubt here because his content is specifically not political and it looks like he wants to keep it that way.
Just made this today, but with katsu chicken. That blending is on point. I added golden potato and a carrot in mine. As well as some mushrooms blend and spinach.

As someone who lost the top portion of his ring finger thanks to a mandolin slicer, YES. Those mf'ers are out to get you. Be SUPER careful when using them because you have the possibility to cut something off and never get it back.

WOAH BRÖTHER this is the best katsu curry I've ever had, I've tried some amazing ones in Japan and awesome restaurants in the states. The puree and sieve takes it to another level, although frustrating. Today I learned using the smallest blender at high rpm achieves the smoothest sauce. Thanks for the outstanding recipe! 👏👏

I’m glad that Josh doesn’t shy away from using MSG no matter the “controversy” of how bad or good it may be to include in food or recipes.

it was a lot of work, as you can tell from the video, but the flavor is unmatched. Crazy delicious! Whole family left the table fat and happy! I don't have a blender (I cry... 😭) so that process was extremally annoying. Tried an immersion blender first, which you can do if you hate yourself, then I switched to a food processor, but still feel that I was not able to achieve that sweet velvety curry that Papa had... (I cry again 😭😭 two times). Again, everyone left fat and happy and the left overs were few and short lived. Highly recommended. (Thanks Josh, now I always sing when I add MSG to anything. No really, thanks. I love singing)
I will tell you. The MSG disclaimer at the beginning was a cool but excessive ad for the brand - since it sponsors you, I think - but the MSG tone you sing in the videos is SWEET AND HILARIOUS. Liked this recipe very much! I learned to fry the katsu two times for extra crispiness (without burning it! Watch out!).
Made this two times already. The best curry katsu I ever had. Ever since trying it in asia I have been dreaming with this dish. And to be honest this is even better than Coco Curry.

Just here to say respect for actually making the curry. I once tried to find a Katsu curry recipe online and it took way too long to find an actual one and not just instructions to used pre-made blocks which is nuts. It isn't even very complicated! Fun fact: Chinese restaurants in the UK often sell a distinctive curry that lots of people like and their 'base' curry of onions/apple is very similar to this, Madras curry powder is used though.
It's possible msg is actually a healthier alternative to salt because it's ability to improve umami is greater than that of salt and so you end up eating less sodium overall.

just throwing it out there, there's a fusion cuisine "Indo Chinese", originates from Kolkata area of india, main dishes are 3 types Chicken / Paneer (indian cottage Cheese) / veg (mixture of veggies : carrots and cabbage being the main ones), the dishes : Chowmein, fried rice, Manchurian (dry or gravy), chilli (dry or gravy). I would love to see your take on those josh
As South East Asian i can promise you that the amount of MSG that's added in this meal is not even that much, compare to the insanity alot of us ate every day.

JOSH!!!!! My Katsu pork was SLAPPING!!!!! Never used MSG before and oh my word! It turned my cheap piece of pork into meltingly soft pieces of YUM! WOW WOW WOWEEEEE!!!! By the way, I'm from South Africa so your videos are changing lives all the way over here!

omg he did it, one of my favorite dishes of all time. Personally I'm a fan of the pork egg curry dish, which is the same thing but with an egg on top, if ur gonna make this, I highly recommend... THE EGG
since you already made katsu curry, how about give katsudon a shot? One of the best rice dish ever!
