"THE LAST ORDER" is an interview series featuring 9 bartenders from various bars in Tokyo. This time, we will deliver an interview with Mr. Rogerio Igarashi Vas of Bar Trench, which is located in the little alley of Ebisu. We asked him to talk about the charm of the city of Tokyo that he felt when he came to Japan in 1994, the history of Trench which started as a small bar in Ebisu, his encounter with absinthe, and the future of Japanese bar culture.

    When i saw Bar Trench in Netflix, right away i imagine myself playing real good deep house because of the ambience, chill, and intimate vibe of the bar. I will definitely visit this when i come back to Japan.

    Of course he does. He is polyglot and his native language is Brazilian Portuguese. We asked him to talk about his perspective of bartending, which is the issue a bit difficult to put into words, so we decided to shoot this interview in English. Anyway, we wish this video could capture Trench’s concept and his philosophy of bartending. Thanks.
