SPAGHETTI AGLIO e OLIO (Garlic & Oil):
1 lb Spaghetti
¾ cup Extra Virgin Olive Oil
10-12 cloves Garlic, sliced
½ cup Fresh Parsley, chopped
1 tsp Crushed Red Pepper Flakes, or to taste
1 tsp Black Pepper, or to taste
3/4 cup Pasta Water, approximately
½ cup Grated Pecorino Romano, or to taste
Salt to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    Oh Gina! my mom used to cook this for my dad (special) when he'd come home late from a union meeting...she's Italian, he (was Irish) . Mom is now 103 and living independently in a 55 and older community. I will tell her about seeing this video; she'll get a kick out of it. She grew up in Newark, NJ's Little Italy by Branch Brook Park. Mom now has two Great, Great Grandchildren thanks to two of my Granddaughters Daughters.     I made this for my family, I followed her recipe to the letter. A little of this and a little of that, more of this, and some sprinkles of that. My family was in shock! They all asked , how I made such delicious pasta?! Literally I make it once a week. It is fantastic! I add a little chicken or shrimp every know and then with some garlic bread, my family loves it! Thank you Grandma for teaching me how to cook this dish!!!!

    yes of course ask the indians and/or the whole asian people. thats quite a good chunk of the world, india and asia combined people, and thats not enough, there are entire nations eating potatoes all day every day, and not even thinking there is pasta in this world. pasta is just a food carbohidrate supplement , rice is another, cous cous is another, potatoes are another and so on

    Because many people have the " that's not how my Grandma made it so it isn't correct" syndrome. She all the time tells us " This is how I make it, somebody else might make it different." And then there are the garlic haters. They all lead a sad life I suspect.

    This Nonna returns me to my youth when we had Nonna’s and Zia’s who cooked daily like her. Adding the starch water directly to the cooking oil is new to me. My mom reserved a few cups and added it to the pasta after combining the pasta and ingredients. I will definitely try this Nonna’s method the next time we make it. Meaning, next Friday which is our regular “i maccheroni agli olio night”. For variety, we’ll add shrimp to our dish and instead of parsley, we’ll use fresh chopped basil leaves.. This dish works beautifully with spiralized zucchini too. Thank you Italian Grandma (Nonna)! 🇨🇦

    Am I the only one brought to tears when she said they prayed over the food and then proceeded to say the blessing? She reminds me so much of my grandmother who passed when I was young, I miss her terribly, and Gina brings back all those lovely memories.

    One of the simplest, most underrated and delicious dishes of Italian cuisine. My mom was Sicilian. Her version had anchovies added to it, an entire oval tin, oil and all. The anchovies would melt and flavor. I never cared for the anchovies but I put in fresh basil and slivers of sun dried tomatoes. You can't go wrong with this dish. Bravo!

    I love her, my grandmother lived to 101, God Bless Her. My Primiano family had a farm in Jersey, I grew up eating food that I will never find in the best Italian restaurants. Home made red wine vinegar and hand picked, washed dandelion salad. The meats, chicken and pastas, I could go on,on and on. I'm 71 now and when I watch this wonderful woman cook, I see myself sitting at a family filled table, utensils in hand, mouth watering and love oozing from every pores. Oh yeah,"don't throw coats on the bed, watch the pasta"! Thank you Grandma.

    Just made this - not only does my entire house smell divine, it's also extremely quiet because my three boys (hub & kiddos) are all too busy stuffing their faces to say anything. The simplicity of the recipe does not diminish its deliciousness.

    This is a delicious dish which I have seen sold in restaurants for $16 or more! I make mine the same way except I 'finish' the pasta in the skillet after draining water. Sometimes when I have sun dried tomatoes on hand, I finely chop a couple of them up and add in. My mom used to throw in a can of anchovies oil and all while dish still piping hot. The anchovies 'melted' into the pasta for a unique flavor. You can get very creative Aglio e Olio!!!!! Bravo!

    I started watching this video for an authentic Italian recipe to do at home, but she reminds me so much of my late grandmother whom I still miss dearly that I have burst into tears and still crying while I write this. Cherish the time you spend together with your loved ones everyone!

    Dude, aglio e olio is exactly the after-midnight snack, back in the days when I was still in Italy me and my friends would sneak into the kitchen after a night out and make this as a cure for hangover. Works 100% of the cases.

    i'm saving this video because 1) i LOVE spaghetti with garlic & oil and 2) she reminds me of my paternal grandmom, who lived with us while i was growing up. she was born in 1905, and lived to be 94. i cried watching this, because although she came to america from sicily at age 11, so her accent wasn't as thick, there was just something about gina that reminded me of her cooking and speaking to us, showing us how to make things, especially on holidays. 💜💜💜

    Growing up in the 1950's/60's, we would have this for Friday dinner, especially during Lent. We called it "Pasta Shoot". Italian family in Southern California.

    They just dont make em like this anymore. My grandmother is 94 and still insists on doing all of the cooking AND cleanup afterwards. A lot of people who dont understand would probably be outraged, but its her comfort zone, and she honestly wouldnt have it any other way. She literally wont let anyone else do it in her place. I get the feeling this woman has similar qualities. God bless her.

My Italian great-grandma, (Nonna) and grandma, (Nonni) have both passed. This wonderful woman reminds me of them in her voice, accent, and charm. Love her!

    Gina’s warm and happy personality reminds me of my 2 Italian grandmas and she makes all the dishes I grew up with. This spaghetti with olive oil and garlic was one of my favorites that we had on many of our no meat Friday dinners. So good, no meat needed!

    Dear, Mama Gina. My mother just passed, she loved watching your videos. I would put your videos on auto and she'd lay in bed sleeping most of the time near the end, but your voice and familiar accent soothed her soul. I should note, you are one of the few who pronounces ricotta the way we do. I cannot thank you enough for making those videos, Ma would say you are a "real work horse" making all those tremendous recipes we all know and love... I'll always thank you for being there for my mother in those days, you were her last buddy...

    @@BuonAPetitti She had alzeimers and I took care of her very well, she was a great cook taught by her gourmet father and taught me, and I extened her life by being there knowing her needs and how to feed her. She's in a better place now, and lived a long and prosperous life well spent, a truly great mother. She really did love you like a friend and felt content with you on her tv. Thanks a million for that and all the work you do. We had seem them all over and over!

    I just made this dish and it was AWESOME!! The smell was amazing!!!! You will never get a dish this good not even in an Italian High Class Restaurant!!! Nonna Gina you rock!!!!!!!!! God Bless!     "Why don’t we buy her a new...?" This video just popped up in my suggestions and I was immediately delighted, and one of the things I most loved is how basic and down to earth the entire production is. No fancy gadgets or $700 pots and pans, no chopping skills that demonstrate just how out of my depth I am even watching the video, no ridiculously obscure or "artisan" or "locally sourced" or "(other words for really expensive)" ingredients. It's just a really nice lady letting us share her kitchen and her recipes. And my WOW this looks amazing and I am going to try it soon! Thank you to each of you who help in making this content, in front of or behind the camera! :)

    @@mario123m Given that a lot of the salt will be dumped out with the excess pasta water, that's true, but just as a raw amount of salt that looked like half a cup, which is a LOT of salt. Given that she's also adding salt to the sauce, that's a fairly salty meal.

    @@thevoxdeus hahaha bucket of salt yes thats what I thought aswelI. I made the dish today. I have put in way more salt then I ever did in a dish but less then grandma here and straingely enough...I missed some salt! Usually I dont eat much salt either.

She was not Italian but married to one and cooked Italian food, she is no longer here and I am so happy you are teaching us authentic Italian food!

    This dish reminded me when my nana used all of these ingredients but added a scramble egg and toss it all together with the spaghetti and then fried small amounts in a frying pan. Those we're my best memories of her in our kitchen 50 years ago.

    I was in Sicily and a friend's Grandma showed me how to make Aglio e Olio exactly like this. Couple things she stressed... *Never break the noodles *Never wear my hat at the table (My bad) *Never leave her house hungry
