Marinated Eggplant (Melanzane Sott'olio)
6-7 pounds small to medium eggplants
½ cup Kosher salt
4 cups white vinegar
8 cups water
2 tablespoons dry oregano, or to taste
½ teaspoon black pepper, or to taste
¼ - ½ teaspoons hot pepper flakes
5 cloves garlic, sliced, or to taste
2½-3 cups extra virgin olive oil
Finish with salt to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    I am an Italian man who is not afraid to show my emotions. Every time I watch Gina cook it brings tears to my eyes. She reminds me of my grandmother and my mother who are no longer with us teaching us how to cook these old recipes from the home land. This is one of my favorite recipes I am actually eating some of our own right now. Thank you Nick for sharing this beautiful lady. Cherish every minute with her because when all these mothers and grandmothers are no longer with us we have to carry on their traditions. This recipe is exactly the way we make ours. I watched my grandmother make this when I was a young boy and my mother taught me how to make it as I grew older and to this day I can't wait for eggplant to be ripening at The Farms here in Colorado.     Thank God today is a Nonna Gina day! I always tell you how much I love you Nonna , but today this note is to Nick , your son-in -law!! Thank you so much Nick, for making these videos possible. I am sure it must take a tremendous amount of time to film, edit, and everything else that is necessary to produce the best videos on You tube!     I make this every year. I used to do this process with my Nonna every summer. Now it’s just me alone in my kitchen but I feel like she is there with me. I love making sandwiches with marinated eggplant, roasted red peppers, tomatoes and fresh mozzarella. All with some basil and olive oil. My favorite sandwich of ALL TIME.     When I was growing up my Nonna used to make the eggplant like that but you brought a tear to my eye today because the song you sang my Nonna would make fresh pasta and as she was rolling it out and cutting it she'd say to me Giuseppe play my song on the accordion and the song you sang today was the song I used to play for her.     This was one of my favorite dishes as a child. My grandmother left the skin on and sliced the eggplant lengthwise …she kept the eggplant in a large pottery crock with a wooden lid and a big stone to keep the lid secure. I will try to duplicate hers using your recipe…..Thanks Gina 🙏👍

    My Grandmother was from Menfi in Sicily, and she used to make Eggplant in the oil with Garlic and Oregano very similar to this... It was so good... She got so much joy out of feeding the family --- cooking to her truly was a labour of love.. We dearly miss her.

    Gina my mom was born in Chicago Illinois but 100per cent Italian .the family moved back to lascari Sicily. When she was 4years old .she taught me how to make this but she left the eggplant in circles. I now make it for myself and love it .I make eggplant sandwich s.

    Thank you Gina for sharing your recipes you make my heart so happy. There are so many things you do and say that remind me of my Nonna who i miss so much. She use to make so many of the things you do. I would spend hours in the kitchen watching her cook when i was a little girl. I only wish i would of listened and learnt more.     This woman's techniques are unsurpassed. Amazing how much knowledge she imparts in every step of the process. This is my favorite way to eat eggplant. Our neighbor in South Philly would make ours. We had two fig trees and we would give her as many as she wanted and she would give us this melanzane sott'olio by the quart. And fig cookies to die for.     my aunt use a pillow case and clothesline to drain hers. She would put the cut up and salted eggplant in a pillow case and hang it on her clothesline overnight. She had the reel type and no critters could get to it, she would reel it out to the middle about 15 feet off the ground. I had another aunt that discovered you could not put them thru the old wringer washer wringer. She said her spin cycle on her new washer was no help either. She tried aunt #1 pillowcase idea in her washer. they were innovators.

    I'm hoping you know this recipe with all my heart. My mother would buy green olives, take out the pit. Put it in a big jar. Add celery, olive oil, vinegar (I think a red wine vinegar). I'm not sure of any other ingredients. She would cover the jar and leave on the counter about a week. Until the olives turned black. We would eat it with Italian bread. It was wonderful. Do you know the recipe? I pray you do. She also made eggplant 🍆 just like this but she added red wine vinegar to the jar 🫙. Oh the memories 😊! Thank you for this recipe! I can't wait to make it! 😊😊❤😊 I bought your cookbook and love it ❤

    I just love your videos!! My grandma was from Sicily… unfortunately.. she passed away bf I could really know her but my grandpa carried on her tradition as much as he could.. he met her in WW2 .. he was an army man… my mom recently passed as well 3 yes ago… I do want to go to Italy and rediscover my ancestors and roots.. you make me smile.. knowing our heritage is still there and do authentic.. I’d love to be like u… ❤️ keep up the inspirational videos snd the true Italian heritage

I'm Sicilian and my mother taught me to make a lot of stuff but she never wrote anything, so watching you I write the recipes because I remember most of it but not all and you're helping me thank you but I'm watching you make eggplant my mother never cut strips ,left round.

    One of my favorites, my mom used to make. She added carrots,celery and black olives to her marinated egg plant. So good on a sandwich. I’ll have to make this now.
