    Marco is my man at least character-wise. Glaring at a person with a knife in hand and getting them afraid is way cooler to me than yelling at them. Plus he is god at chopping onions.

    There are a few things I would like to point out about Marco's recipe. This series of the BBC Maestro solely focused on cooking with vegetables and making them the main star of any dish which is why he has used sheets of Celeriac in his VEGETABLE lasagna and not Vegetarian lasgna. Marco Pierre White was one of the youngest chefs in his time to receive three Michelin stars but he gave them back willingly. He is way above the world of Michelin.

    Salt at the end makes sense, you will actually taste it, salt being dissolved or mixed in will not stand out very much and depending on the cooking can even be a waste to add because you essentially won't taste it at all unless you make it touch the tongue.

    For low-sodium cooking the advise is to always just add the salt towards the end, because all that adding salt to the boiling water etcetera is pretty much a waste for the flavor, it gets absorbed and never touches your tongue.

    @@clutcher96 I tend to agree with you, but to be fair, every national has a hard time when someone (even more when someone from another country) adapts a recipe that has been a classic for decades. It's not an Italian specialty. I'm Belgian, and I'm pretty sure I'd feel the same way if an English chef or an Italian chef or whatever would make his version of, let's say, carbonnades flamandes. It's the stupid pride everyone has in himself: "don't touch MY national dishes if you won't do it EXACTLY as it was carved on the stone walls in MY country 2000 years ago!" 😀 😀

    Marco's mother was Italian. She passed when Marco was six. So he really didn't grow up with knowledge of his Italian side. Very British

    13:00 hi Vincenzo, vegetarian here. I've made my research, and what Marco means with "italian vegetarian hard cheese" is a hard cheese made in the italian way but the rennet that is used to make the cheese is a vegetable or microbian rennet, and not animal one. Cheeses like parmigiano reggiano, mozzarella, grana padano, gruyere, etc., use animal rennet, and therefore are non-vegetarian. Fortunately, vegetarian cheeses are becoming more common to find in supermarkets, so we vegetarians can eat them.

    @@alanmckeon8321 Yeah, that’s the million dollar question. I’ve never heard a reasonable answer to it. If every human being on the planet became a vegan, what would we do with all the animals? It’s not like cows have natural predators in North America or Western Europe. The population would explode. In the south and mid-west, we already have a wild pig population problem. Can you imagine the chaos of all the currently domesticated pigs roaming going feral? If they don’t go free, who is going to pay for their facilities and maintenance? I’m willing to do that if I can get my milk, bacon, eggs, and steaks, but I’m not paying for that just to control their breeding and population. Furthermore, is that not just another ethical dilemma? If it’s wrong to kill them, why is it okay to own them, or cage them, or control their breeding? Where is the line drawn and why? No vegan has reasonable answers to any of that. It always becomes circular, or incoherent.

    Maybe one of us is confused, but you sound more like a vegan. Vegetarians will still eat cheese, milk, etc. because it contains no meat and/or no animal ad to die for their meal.

    A lot of people use the word "lasagna" for layered food. I agree with you it looks more like a moussaka then a lasagna. The cheese he's using is vegan grated cheese, it's meant to replace parmesan. It's no where near as good. My daughter is unfortunately allergic to dairy so I always have this cheese available for her. For anyone reading this, if you want a similar experience to a grated hard cheese, fry some bread salted dairy free bread crumbs. You will find videos like this on his channel. I'm impressed on Marco's video on how vegan cheese melted like that lol it usually doesn't melt but burns.

    well he clearly says vegetarian, not vegan, it means it's made without rennet, which is from animals, but it still has milk in it. Most likely he calls it hard cheese as if it's made without rennet, it's not technically parmesan etc.

    @@SneakySeriyuu in that case it makes sense it melted like that. The vegan cheese I have access to and tried over the years doesn't melt in the oven at all. I have now started making bechamel using vegan butter and almond milk and mixing in vegan cheese with it to make melty "cheese".

    Bologneeesee or Bolognese... not all are Italians and the world is not spinning around Italy. Whoho, If you don't do it like my great grandmother did it it's not authentic. All in this world evolve, even italian food and recipes. And, it's good to see that the world outside your little room has so much to offer in food, spices and flavors. Lasagna is just a layer or something between something. Pasta, meat, veggies, my pillowcase (not that please I say to myself). If it look like a lasagna it is a lasagna, doesn't matter whats in it just it taste good.

    I'm a big fan of the channel, but I get a bit tired of some Italian and Spanish people goings nuts with the mispronunciations. In the UK and Ireland that's how most people say Bolognese. Italians murder loads of words, but I understand them and don't correct them. It'll will never change. There's is nothing more pretentious than someone speaking English and drifting into french and Italian pronunciations. The cooking methods here are so authentic and yes our mistakes need to be corrected. But leave the languages to their swim lanes. Otherwise we'd all have to pronounce words for items and things to sound exactly the same as the country they were invented in. I still love the channel, but there is no way I'm ever going to order and say Bolognese the way Vincenzo does, unless I'm in Italy. When I'm there I'll do my best.     As a fluent English speaker (not native) and a learner of basic Italian, I tend to pronounce Italian words by their original subconsciously. I also tend to do that for Spanish and French (albeit horrible) words. But that's just me. I don't try to comment on Americans/Brits anglicizing Italian terms when the language of conversation is in English.

    With the vegetables you mentioned - cauliflower, zucchini - as replacement for meat, the dish doesn't have any source of protein. Would you consider soy granulate, seitan or maybe something like kidney beans or chickpeas suitable additions to a vegetable lasagne?

    I am a complete amateur but I have to say one thing about salt: When it comes to soy-sauce I absolutely want salt! I bought Heinz soy-sauce for a while and always wondered why I don't get the "sensation" I had in earlier days when we ate spring rolls at my mother's house. Some days ago I had sushi and the wasabi section included Kikkoman soy-sauce. And immediately I understood what I need next time. Change brand! The Kikkoman sauce is the one to look for or even higher priced ones. Lower priced soy-sauces don't have the kick of salt and/or are far too sweet.

    The ring pasta he's talking about it's called Anellini alla pecorara, and it's typical from our region Abruzzo. You can find some recipes online but there aren't many (not until he actually makes a video 😊)

    For the cheese to be called Parmigiano, it has to be made with rennet from dead calves' intestines, so it's not vegetarian. You can buy hard cheese that's in effect parmigiano, there's no difference in taste, which is made with a vegetarian rennet from genetically modified bacteria. That in turn may offend some of the never-GMO crowd. So very sensitive vegetarians and vegans could never have a good lasagna, so sorry ...

    Thanks! Great reaction video. As for the salt, Chefs that I have worked for that were heavy smokers I always had to double the salt amount compared to non-smokers. Maybe Chef Marco still smoked?

    Hmm, what is vegetarian cheese? One restaurant I worked in used full strips of zucchini,yellow squash,and eggplant, with pasta sheets and a vegetable sauce if I remember correctly

    I hope next time Marco will do some research and confirm it himself if the script provided by him is the right. He's a chef so we should expect that he knows his crafts too. But I know he's a professional guy, he'll learn to improve this.

    Vegetarian cheese is made using vegetable rennet rather than animal rennet to create the curds, it is still actual cheese, not vegan.

    Heres the thing. Marco can surely make lasagna with/without meat and with Pasta(flour) BETTER than this italian guy. But when asked to cook without pasta, Marco can still make lasgna BETTER than this italian guy.

    The ring pasta he's talking about it's called Anellini alla pecorara, and it's typical from our region Abruzzo. You can find some recipes online but there aren't many (not until he actually makes a video 😊)

    I definitely know less then him about international food but I DEFINITELY know more than him about Italian Food. He has no clue and I dont care how many michelin stars he had. Some of the best chefs I made in my life never received a star and they actually still cook in the back kitchens and dont want to became famous. They cook because its in their blood. These are the best chefs for me.

    He was asked to cook something where vegetables are the main ingredients of the actual dish, not just a vegetarian lasagna. MPW did exactly that, and I am ready to bet my house that his dish was just delicious. So on one side we have a random KZreadr, on the other a chef who at age 33 was already awarded 3 Michelin stars. The youngest chef to ever achieve that to that point. And what’s the point in criticising the way MPW pronounces “bolognese”. Why is that so important. This KZreadr is Italian, but he cannot pronounce bolognese very well either. I am from Bologna.
