My mother would slice up tomatoes, cucumbers and grate carrots. She would arrange them in a circle on a plate. Salt and pepper and then make her own vinaigrette to put on top. The last thing she would do is grate two eggs over the top with a cheese grater.

Emmy can you please try different "weird" seasonings like black Himalayan salt, everything but the bagel seasoning, nooch, that thyme salt from Aldi that's a cult favorite, tajin, butter seasoning (like for popcorn) etc! You could do it all on avocado toast as a base since that takes seasoning well. I eat black salt all the time it's my favorite but most people don't know about it or think it's weird because it smells of sulfur. I think it's deliciously eggy and goes great on potatoes, tomatoes, and oddly enough with eggs lol.

I can't wait to try all these flavors! My go-to for my avocado toast is mash half an avocado and spread it onto buttered toast, then sprinkle some Himalayan salt and onion powder, and nestle a soft fried or poached egg on top so I get that runny yolk. Grating looks like a great way to get some yolk into every bite

I use a box grater for boiled eggs when I make egg salad, it's so much faster and easier than mashing them with a fork... and also if you like celery or pickled anything in your egg salad, grate that in too too! Also the instant pot makes very nice consistent boiled eggs, once you figure out how much water for how long. Mine always crack when I start with boiling water (even when I poke a hole in the end with the air bubble) and I find it's inconsistent for soft boiled eggs to start with cold water. Instant pot for the win, taking the guesswork out of it...

The thing about steaming eggs is that the shallow amount of water needed for steaming comes up to temperature a lot faster than a full pot of boiling water. They have very similar cook times and results. The difference is how much water you need and how long that water takes to boil. I'm impatient. So I prefer the steaming method.

Yeah New Zealand!🇳🇿 Marmite is a good meat flavour enhancer or (flavour) replacement. Marmite and lettuce sandwiches when done correctly are delicious, healthy, cheap and easy.

Not in Australia now! iceberg lettuces are $5+ at the moment because of all the rain ! Between all that and the skyrocketing petrol prices - OUCH, we are in for a world of pain.

@@MissEmmasparkle Australia goes through years of drought, followed by a couple of years of heavy rains - Dorothea McKellar wrote the beautiful poem A Sunburnt Country in 1908 which is all about that (worth googling it). We are currently in a La Nina rain period which is why many crops have been wiped out and prices have soared! We won't starve but for many it will be tough. I particularly feel bad for restaurants which are still recovering from covid and will struggle to stay profitable without raising prices, which will affect their traffic - it's a viscous cycle! Australia doesn't import much fresh veg, so it is what it is. Still, 45p is really really cheap!! Lucky you!

I have an avocado tree so I have all the avocados I want when they're in season, about 4 months of the year. Over the years I've tried avocados all kinds of ways, but my favorite is avocado toast. I have almost every morning. I will definitely be trying these variations. I've added wasabi to guacamole, mainly because I'm allergic to chilies and tomatoes, so my guacamole needs something to give it a kick. I've got some Marmite, so I'll give that a try, too. I generally only use Marmite to add umami to meat mixtures. Marmite toast is a bit salty for me, but the avocado would help cut the saltiness. I sometimes make egg salad with avocado in place of mayo. It's tasty, once you get past the green eggs vibe, Sam-I-Am. I sometimes have avocado toast with a hardboiled egg on the side. I don't know why I never put it on top. You know, I bet some capers on top would be good, too.
