Iraqi food making kebabs from lamb in the streets of Iraq
Kebab is a food that is abundant in Iraq and is prepared from minced meat with fat using grilled skewers and grilled over charcoal. In many countries, kebabs are called “grills.” The origin of kebabs is an Aramaic word. The origin of kebabs goes back to the famous Aleppo cuisine, where the Aleppo people were the first to attend kebabs. History records the people of Aleppo’s fondness for many types of grills and their uniqueness with luxurious types of kebabs, which spread in many countries. The kebab in Syria in general and in Aleppo in particular is distinguished by its unique taste because of the quality of the luxurious Syrian Awassi meat with a distinct taste and because of the good pasture, where the city of Al-Bab in Aleppo and the city of Hama is famous for its fertile pasture, which produces sheep with luxurious meat, where the meat of these sheep forms the backbone of most dishes in the kitchen Al-Halabi, including the famous Aleppo kebab, where the people of Aleppo prepare it in many ways, either without additions. The name kebab can be traced back to the ancient Syrian Aramaic 'kababoo', which means burning and charred. In the fourteenth century, the word was used to denote the method of grilling minced meat in a spherical shape. Shish kebab also denotes grilled pieces of meat that are grilled on a skewer (the word shish means skewer). In the Western world, the word is used to denote grilling on skewers, such as veggie kabob, which is grilled vegetables, or corn chicken kabob, which is minced skewers of chicken covered with sweetened corn flour.

The kebab mixture varies from country to country. In North America, meat is covered in a sugary hickory sauce. In Greece and Turkey, it is dazzled with pepper and salt only. In Lebanon, lightly greased meat is purified to impart a special flavor and mixed with meat. Syria is famous for the Aleppo kebab, which is widely known in many countries, and the city of Aleppo is distinguished by the types of Aleppo kebabs, which are more and more diverse, and have their own mixture and distinctive delicious taste.

In Iran and Iraq, parsley is not added to the mixture.
Sometimes sumac is sprinkled on kebabs, as in Syria and the streets of Iraq.

@@iraq-street-food I lived more than 3 years in ISKANDARIA.Abu Ghraib Irrigation and Drainage Project between the years 1982 - 1985.I have very good memories for the people and country.The time was unfortunately war with IRAN.
I've been in many countries and tried every food there is to try. In the grilled category, Iraqi kebab remains to be my favorite. its insanely delicious.

Yes, and I also prefer the Iraqi kebab because it is fragile and melts in the mouth because it is made from lamb meat only. Have you tried kebab that is cut in the hand as well as from lamb meat, but its flavor is slightly different

@@iraq-street-food Galoti kabab of lukhnow...There is a story behind it...Nawab of lukhnow lost his teeth due to age but still wants to enjoy kabab...so his Cook invented Galoti kabab which melts in mouth and Nawab can enjoy it without teeth as well.

Iraq kabob is slightly different than your typical kabobs from like Turkey or Iran, I think it’s the fine mincing of the ingredients and seasonings, they for whatever reason they taste better and I’ve tried a lot of different kabob styles, also Iraqi food is insanely delicious, they have this side dish I don’t know what it’s called called but it’s like a finely chopped salad that they put some type of a seasoning in it that takes it to the next level, also they have grill lamb chops that are to die for, in San Jose California there’s an Iraqi restaurant that is always packed and they have outrageously delicious food, no matter what I order it’s cooked fresh to order and it’s simply perfection. This is a mouth watering to watch real authentic Iraqi cuisine.

In Iraqi kabab they don't use spices they focus on meat quality and they only use sheep meat no beef or lamps

Remember in the 90s a place at the end of Arasat al Hindiya ( Baghdad) called Kebabcici....oh minced kebab straight from the grill...miss Iraq and Baghdad

Happy to see Iraqis enjoyin life as every people all over the world deserve. In my country, Brazil we use basically rough salt to roast meat and after you can ad the salse, pepper, etc., what you like. And we have too our kind of kebabs, we call "espeto" and, in this case people use to ad some spices, as garlic and black pepper with the salt. All the best to iraq!!
