recipe:
Medium-cooked cheesecake (17 pieces):
175g KIRI cream cheese, 112g milk, 12g whipping cream, 25g butter, 3 egg yolks, 10g caster sugar, 8g low-gluten flour, 9g white wine, 37g egg white, 30g caster sugar
Cake slices: 3 eggs, 30g corn oil, 30g milk, 30g low-gluten flour, 25g fine sugar, 1g white vinegar
This recipe is slightly modified by me. The original recipe has 50 grams of egg yolks. When I made it, 3 egg yolks were about 45-47 grams. So I put 3 egg yolks. Because there were less egg yolks, I reduced the low-gluten flour by 2 grams. The original recipe should be 10 grams. , I also slightly reduced the amount of sugar. Nothing else has changed. I don’t think this will have any impact. You can just follow this recipe!
You don’t have to add wine, it just adds flavor. You won’t be able to taste the alcoholic flavor even if you leave it, it will evaporate after baking!
