Here in Mexico City, Mexico I frequent a British owned cafe that has this cake regularly with different jams. It is also regularly done with an olive cake instead of the traditional. Mighty fine. ✨

You two should be in a curriculum for teaching people how to love, cherish, and respect one another in a love relationship (and have so much fun together!) Everyone in the world (who doesn’t have it…most!) wishes they could feel the way you two do about each other. We know nothing is perfect and it’s not all rainbows and sunshine, but still you maintain such a beautiful bond. Thank you for allowing us to see glimpses of it, and to remind us that it can indeed exist, and also persist for decades. You are luckier than you know. ❤❤❤ 🌈 ☀️

I'm not even done watching this video yet, but I had to pause it so I could comment. Joerg at the beginning saying how he loved sausage rolls and you saying, "Stop it! we're not talking about sausage rolls!" had me laughing so hard, and I totally agree with you that the best part about baking is eating some of the batter! I, too, have been doing that since I was a little girl. I'm 70 years old now and I still love doing that, so just want to let you know, you don't outgrow it!😃

Happy New Year! I’ve learned a valuable lesson. If I’m going to watch a video in which Kirsten & Joerg are baking, I should eat something first. Otherwise, I head straight to the kitchen after the video and indulge in things I shouldn’t eat. 😄

Hello you two! Loved the video, as always. Just a cake tip - I'm coeliac, and have found that adding 1/2 tsp Xanthum Gum makes the cake rise better, and it's fluffy and so moist! It acts like the binder of gluten. There is an incredible gluten free baker called 'Loopy Whisk' and her book is called 'Baked To Perfection' - highly recommend!

It made me laugh when you say how cold and snowy it is in Greece at the moment, because many years ago when I taught English on the island of Lesvos, it was the same weather in my first winter there. That looked like a very good cake. Victoria sponge is usually quite high in fat, so my doilies end up absorbing the fat too, so I don’t think it’s due to your cake being gluten free. I have always followed my mother’s recipe for Victoria sponge, which is based on weighing your eggs (I use three eggs to fill two 8” shallow cake tins) and adding the same weight of butter or margarine, sugar and flour. I don’t put cream in a Victoria sponge, just jam. For my mother’s special chocolate cake, I use the same recipe but add a generous tablespoon of cocoa powder and a splash of milk to the mixture, and fill the sponge with chocolate buttercream (2oz of butter or margarine, 4oz of icing sugar and a few cubes of Cadburys milk chocolate melted and added in). The cake is topped with melted Cadburys milk chocolate.

Happy New Year! This looks delicious. I need to get one of those rolling pins. I saw a kitchen sign that said “I baked it with love cos I licked the spoon”. And that jam is the best.
