For making homemade flour mixes for Khaman, Dhokla, Handvo, Dosa, Idli, Kapuriya, I use organic Rice and Lentils. So I do not wash them but if you suspect that Rice or Lentil needs to be washed, then you can follow the soaking Rice Lentil method after washing them well and then grind.

    Bhavna is this mix of flour and lentil is same as handava mix? I really find much easier to use flour mixes then the wet, soaked ingredients to prepare such items. I always have these ready made flour mix handy in my store cupboard.

    Yes, Indian grocery have it but if not soak rice and dal for 4 hours m, grind and ferment.

    I came to visit you here once again dear Bhavna. If i use my ground rice( coarse in texture) with besan and udad daal flour, will this recipe work? Please let me know as I’m looking for some recipes to use my ground rice pack which I bought by mistake instead of fine rice flour.

    Kaneez Samdani you can use a big pan instead of the steampan but half pan water and than you can use cooking woodspoons across the pan and but your dishpan on that and cover it with a big bolw or anything that close good

    +vatsal shah dhokla is made yellow with turmeric, combination of rice and chana dal only while Idra white, thin and urad dal is added as well

    Thank you for this recipe.. Most of us don't know these subtle differences, we think everything is dhokla.So, that was a real eye opener.I have one question though, the batter was so well fermented, then why did you still add Enos fruit salt?

    Fermented batter gets lighter, creates some bubbles on the top. Well fermented batter makes the recipes fluffy, airy & lighter

    @@Bhavnaskitchen thank you for the reply. Is there a way to get the batter to ferment if it doesn't after 8 hours? I added all the ingredients to the mixture from the beginning therefore I think it didn't ferment and separated the water on top like ur Khata pura recipe.

    Bhavna i made Idada using this flour mix and they turned out great just like my mummy used to make. Thank you! I prefer using dry flour mixes like this because we have to soak only once. Please make and show us khaman dhokla in this way as well, the yellow one using chana daal, little bit udad daal and little bit of rice.

    Bhavna's Kitchen & Living you have shown the flour mix but not actual khaman dhokla from that particular mix. I have gone through each and every recipes on this. If the process is similar like Idada then i will make that way. Do i need to add yogurt in that? If you get chance send me the link if i missed it.

    TIP FOR NUTMILK AFICIANADOS: Dhokla is a great way to use up the dried spent pulp leftover from making almond milk (or coconut milk). I pop the pulp into my dehydrator (pressed flat on parchment) overnight, pulse in the food processor to grind it, then dry a few hours more before cooling and storing in glass. For dhokla i'll stir in a cup per quart of batter (it is also good stirred into yogurt). Namaste.

    Hey Bhavana..All your recipes are wonderful. I am not sure this is Idada. What I know Idada are very thin kind of dhokla with black peppers on top and usually served with mango ras. You make every recipe very easy and unique way and I like all your recipes very much.

    Batter question: the recipe you use for dhokla calls for yogurt, but your idli/dosa batter relies exclusively on the microbes that naturally cling to the whole urad dal during soaking to accomplish the same fermentation after grinding ... so, since it seems partially redundant from a microbial/ferment standpoint, is the yogurt in the dhokla batter there primarily for flavor, for jumpstarting the ferment, or both ? I'd guess both.

    So, I tried the batter out on my wife, who's pretty conservative in terms of culinary tastes. She really liked the crispy dosas, didn't really care for the steamed dhokla, but then I cubed and fried the latter at 350F for several minutes until crispy golden brown, and she really liked it ... a very good replacement for the polenta she had to give up (which I used to slice and fry for her) along with all corn in general. Personally, I like all three. The dhokla has the added advantage of being well suited for using up the surplus dehydrated almond pulp I have that's leftover from making almond milk ... and the dehydrated pulp is good for tightening up a batter that's a little wetter than ideal too. Win win.

    You said it was 7:00 at night but the clock in the background said 12:24.. then you said you had let it soak overnight but the time was still 12:24🤔

    Also at 3:43 time was 11: 33 and changed to 11:32. I don't know how that happened :/ and once idada was ready time was again 12:27....

    Hi Bhavna, sorry to say but this is not idra. this is white dhokla. idra is thin leyar. tjis is too thik.
