Hello everyone! In this video I will show you how to prepare aubergines in a simple way but with an amazing flavor! Quick and easy recipe of eggplant with garlic and parsley. It is an excellent solution for a tasty appetizer or savory side dish. This eggplant recipe is one of my favorites and I make it very often! Completely vegan recipe without any addition of products of animal origin. Eggplants have never been so delicious! Try this quick and easy eggplant recipe and you will be satisfied! It is always important to cook with love :)
Ingrediants:
- 1 eggplant
- 3 cloves of garlic
- Parsley
- 1 teaspoon of hot pepper
- 40 ml of olive oil
- Salt
- Pepper

My grandmother, who was an excellent cook, never soaked eggplant. She sliced them thin, and salted the slices to draw out the liquid and bitterness. She would watch them and when there was liquid in the dish, she would drain the liquid, turn the slices over, salt them again, then drain off the liquid. Then she would fry them in a small amount of oil. They were wonderful. She would also use this method to make Moussaka, and wonderful casserole type dish that takes forever to make, but worth the time.

If you like this, check out the Spanish Garlic Eggplant from Spain on a Fork. It is very similar and uses the same ingredients, but uses much less oil. I don't mind the extra oil used in this recipe though, since the eggplant is eaten with toast/bread. Anyhow, both recipes are delicious.

😋👍 Anch'io le faccio così alla piastra ...unica differenza le fette prima le lascio solo sotto sale anche un'ora, in modo che buttino fuori tutta l'acqua amarognola e poi le risciacquo sotto acqua corrente 😊
