Hunting and Cooking Montana Pheasants with Ryan Callaghan and Chef Kevin Gillespie
Спорт
Ol Cal, Chef Kevin, and Snort knock off work a bit early one day to hunt some of the last of the season’s Montana pheasants. With a couple plump roosters in hand they return to Cal’s place so that Kevin can show him a classic French dish that transforms the tough to use legs and thighs of the pheasant into a meal fit for a king; or at least a hungry upland hunter.

Would be awesome if you guys created the recipe and added a link for it. Similar to what ATBBQ does. Loving the content and recipes.
"change it to beer" My interest dial was already high but I twisted it off at this point.
So much better than Turkey Hunting. Nothin like a good bird dog, open fields with water and some woodlands, classic double barrel shotgun and some beautiful & delicious pheasants!

Then the dog gets to have all the fun. Haha Nothing like Turkey hunting to thaw the winter heart. Going to have to respectfully disagree. That’s the beauty of our community, everyone has their jam.

Some of the best words ever said. 6:44 . Cooking and eating is the purpose the harvest and adventures are the bonus!
I love the culinary episodes as much as the hunting episodes. Duck Camp dinners is probably my favorite
Kevin always makes a for a great episode, but throw in Cal and you've nailed it. My own cooking abilities hover somewhere between these two guys, so the opportunity to learn and improve is appreciated!
Saw the thumbnail and I thought Ryan got Action Bronson on the show. The duo I never thought I needed that I now want to see.
Kevin is my favorite chef involved with Meateater. Keep it coming 😀
I could watch a whole season of just kevin and cal.
Hunting over corn and cooking pheasant legs for hours is really making the common hunter think this is the way ;) Public land pheasant legs, some steak seasoning, cast iron with bacon grease, and finishing off with your favorite BBQ dry seasoning works well also.

The whole point of Meateater is to expand cooking game meat beyond that though, which makes it more fun and exciting to hunt more things. For me at least. Simple is always great too

Hi from Syracuse NY everyone thank you for sharing your adventures
Kevin is great on the podcast, glad to see him in more stuff.
Kevin has nailed the young Santa look from the Rankin/Bass Christmas specials!
There is a lot of flavor in the pheasant alone. Super tasty bird.
Absolutely my favorite bird to hunt….Boy I miss it.

The two best at MeatEater that aren't Rinella. More of them, please.
Body builders and hunters are usually really good cooks as well
I love my Dutch oven. Greatest cooking tool I’ve ever bought. Short ribs braised in beer. 🤤
Kevin's just taller than his hair. Happens to a lot of us. I liked him when he was on Top Chef, but he's even better on MeatEater.
i have a good feeling that this would be excellent with cottontail
Someone needs to come to Alabama and do an episode
Is this the dog that was bitten by the snake? I noticed the ear in the beginning... if so, that's awesome to see her looking so happy and healthy!
Titled as a hunting and cooking video it was mostly cooking and hardly any hunting was disappointed
A favorite episode… The way Kevin breaks down the cooking science is so awesome . And anything Cal is in, just fantastic! Perfect match for a hunting and cooking segment.
That whistle in the beginning scared the crap outta me!
Cal and Gillespie I think are becoming my favorite 2 gentlemen from meateater.
Awesome Episode! So much information. Not enough Snort!
I love the episodes with some of these great chefs
Love these cooking ones .. learning new ideas
Great work Cal, you really killed it! I don't think they're paying you enough. You need a vacation. 😂 ❤️
Kevin is a fantastic addition to the team!
Hunting with a Chef. Nice!
South Park is how I found out about crème fraiche too. From one Cal to another - Respect.
Kevin is a great asset to the crew… incredibly knowledgeable
My buddy and I are headed to Saco Montana this weekend for a week to go Pheasant hunting - looking forward to making this dish! I will will post pictures and meals!
Kevin really needs his own show. I learn so much watching that man cook wild game.
"peak ripe garden tomato" that description right there describes everything perfect
It was the South Park episode for me too, Cal.
Love watching you guys hunt, in the uk we unfortunately don’t get much to hunt like you guys in the US but pheasant hunting can be done with slingshots over here much quieter and can take more. But the recipes are ace you guys make
Awesome stuff guys
Fantastic collaboration. I've been a fan of Kevin since his Top Chef days. Bring him back!
I absolutely love the pheasant! Legs and all!
I love Yukon Cornelius.
Kevin talks. Cal just keeps eating. Yeah. It's that good....
You have to build flavor. Celery is part of the mirepoix with onions and carrots. Love your guys work. Keep it up.
I would have appreciated a demonstration of the plucking / skinning process.
Left or right this is darn good television here
Classic french dish with a twist...well done Chef!
I love changing recipes with beer, chicken, steak, water and sometimes I mix it in my bbq sauce
You guys nailed it, great video! Will definitely be trying this. My mouth was watering watching this.
This was literally one of my favorite things to watch ever
Might have to try this with some turkey legs and thighs, and maybe go red wine instead of white?
That dish is over the top with Love poured into a recipe.
Would love to get enough pheasants to can them. Not native to my area any longer. I have only cooked 3 and the hubby drove 3 days to hunt them.
I reckon the red wine version would be a winner in my household. Awesome vid guys.
Great work with the Pheasants!
I love all things meateater. Keep up all the good work
Got some goose thighs that might take the beer or red wine route
Cool dish, looks freaking awesome!!
Awesome cook, will definingly try this recipe...
Props to the chef!
Great Episode guys! MUCH LOVE FROM NORTH OF THE WALL!
Man o man am I hungry now
Just followed this recipe today (with some modifications) and it was great! The steps were similar to Coq au vin. This was a treat! The next time I make will definitely invite friends over to feast. Thanks for sharing!
Love these episodes
Looks amazing! Nice work men!
Loved this video!!
Cal is awesome 🇺🇸🇺🇸🇺🇸🇺🇸
We love Montana ditched chickens
such a classic and delicious dish perfect for a relatively tough piece of poultry.
Great cooking episode
I love these!!
Really nice episode and I love the dish already. When I get to shoot my pheasants this fall I will definitely make this dish. Thanks a lot!
Love hunting pheasant and eating them 😋 leave out the potatoes and serve over rice now y'all got a meal.
Thanx

If you are adding lemon juice for flavor as well as the acid consider adding the lemon zest. It adds another level of flavor. Every time I add citrus juice I also add the zest.
I made this for supper tonight in the insta pot. It was amazing even though I got a little heavy handed with the lemon.
Wow!! I kept the legs of my own pheasants, and also the legs of my hunting buddies pheasants....
Looks great, might try it with some grouse legs.
Awesome!!!!
Cal Looks like hair coming back on snorts ear after the snake bit
Good to see snorts ear is doing better
Love it.
Temp of oven dude!!!!
Is it me or dose chef Kevin look like Yukon Cornelius from Rudolph cartoon ??
I'm gonna have to give this one a shot with deer shanks. I bet this would be phenomenal with whistle pig!
Any time I've got athletic bits and pieces, my wife and I reach for the French cookbooks. I get a fair amount of ruffed grouse and those old farmhouse recipes/techniques make for great dishes.
Yummmmmm!
Going bird hunting for the 1st time this year. This makes it so much harder to wait..
looks like it could be a very good recipe for bunny's as well, think ill try to make it a goal of mine this year to test it out!
that looks damn good! we’ll done
I’ve always felt that meat I’ve procured myself (fish, deer, pheasant, etc) tastes better even with simple recipes (like breaded and fried fish filets) than the same thing in restaurants. Even places that are halfway decent at preparing good food or use ‘fresh caught’ ingredients. And I think it’s psychological, you not only know where the meat came from but you put in the effort to get it. And so there’s what I call the ‘victory flavor’ to it.
How long is rinella going to be hunting the animal in callaghans mustache?
