    I only fillet this way if I'm going to cook the fish whole (i.e., in a Thai dish). Otherwise the traditional method yields same result. Since there are "Y" bones (especially close together in the tail section) you'll want to make shallow slices in the flesh (slicing from top-to-bottom) along the entire length of the fillet. Those bones will cook away, especially if you fry them.

    I never saw that done before. However, You threw away two organs (a red one and a hard white one) but what was the item you stashed away in the plastic container? Is it edible? How do you cook it? What do you call it? Please fill me in...

    Two things. Who eats carp and second, that's a whole lot of extra work to filet a fish. Make your cut behind the gills. Work the shallow knife down the spine. Cut through near the tail and work deep at the spine back. Flip the filet on the skin and filet the skin off. No need to scale/filet the scales off. No need to gut the fish.

    Who eats carp? I'm from SE Iowa and have cooked and eaten hundreds of carp. Regarding the filleting method shown in this video. If you scale it, you can eat the skin. Removing the guts allowed him to keep the milt. The shoulders can be removed after the filet. I don't know if he cooks the head or not, but that strip of fatty belly meat 6:35 is delicious when grilled over a wood fire with a touch of salt. If you want to know more, the youtuber "Cheffing Up With Mark" has several videos involving carp. That said, most people here in Iowa disregard carp too. Not unusual for me to go to the river and thanks to the generosity of others, come home with 50 pounds of carp, though I never got my line in the water. I grill, smoke, bake, pan fry, deep fry, pressure can, and even boil carp. I eat all kinds of carp, but my favorite is the Silver Carp. Cheers.

    Only smart people eat carp..... Carp tastes better than any other white fish you can cook. Especially Black Asian Carp or now they call it Pen.... it takes time to fillet debone but by far it is worth every moment. Try it simple, pan fry in butter olive oil, lemon juice a little salt and pepper and parsely you will never want tillapia again.

    @@johnvanegmond1812 Hi, I am in Argentina, and here, we remove some glands that the fish has, wich gives bad taste. removing that, or other option, cutting off the tail and let it bleed just when you fish it, as well as washing rigurously the skin prior to open it, changes drastically its flavor for good. But I noticed, no one in northern latitudes remove those glands. you can see how we do that if you look in you tube "carpa sacar catinga"
