#1 mistake - overcooking (pretty much applies to all foods) mistake #2 - using metal utensils on your nonstick pan. Get a dedicated pan for eggs and only use a silicone spatula. Sure.. you can use chopsticks if you're thinking you need to impress everyone with how artsy fartsy you are... whatever. Everything you need to know about omelet cooking is in the Jacques Pepin vids on YT.

Dont agree on the amount of eggs. I have used 4 & somtimes 5 eggs. Layer the toppings just right. Use olive oil instead of butter. I've found it's just patience when flipping the non topping side over the topping side. Never comes out as scrambled. And forget separating the egg whites. They make preparing a simple omelet complex. I also have an oversized spatula.

Huh, that’s not true and fresh eggs. The higher the album rises on the yoke, the fresher it is. The yellow yoke color is drawn from the the feet and beak which is place their by the feed the birds eat. Corn makes it yellow, in Texas they use millet which is white so the yoke is light. They charge more for brown eyes because the birds are bigger and eat more feed. In NYC, they were caught putting white eggs in coffee.
