    We flew with a frozen brisket over Thanksgiving too. My wife put it in her carry on bag. They pulled it for a hand search. When the guy opened it in Minneapolis she said "it's brisket" and he said "I'm from Texas I know what that is" LOL

    I resemble that remark! Actually, (queue tiny violins) I spent Thanksgiving with my cat. Made homemade cranberry sauce, sourdough sage stuffing, broiled asparagus and a pan - seared cinnamon chipotle dry aged ribeye. Everything turned out great! It was just quiet, though.

    If you need to keep things warm while you are moving from your house to family or friends get you a couple of fire bricks and put them in the oven between 250 & 300. Grab a cooler and put a folded towel in the bottom. Once the bricks are warm put them in the cooler on top of the towel then put another towel on top of that. Put your food in the cooler and then top off with another towel and close the lid. This will create a warm oven in the cooler to keep your food warm and will last for several hours.

    Awww, Mr. Pitmaster grilling salmon on a Weber in 10F weather. LOL I think it's probably not a stretch for you. If I can smoke a full packer low and slow on a Weber in 20F weather, you can grill salmon effortlessly. 😁🤣🤣

    Ahhhh man, it was awesome to see the fam go in for a well crafted feed! I made the mistake of opening my mouth and telling the family “I’ll cook a brisket for xmas”, which here in Australia is mostly just ham and prawns. So will be my first attempt at smoking a brisket on the offset, and vac seal to drive 3 hrs away to my parents for xmas. Happy Holidays mate!

    Wild..... I live in NW Minnesota & no snow has stuck around yet. Very weird. Your Mom is right - people from there should know how to equip their car to drive in snow & ice. On that - the proper northern state tire is the cheapest tire. 40,000 mile soft tire. Up here they will actually last twice that many miles. Cause we don't have the heat melting them. Even in summer.

    Always great content Brad. Pastrami right out of the smoker, is ridiculously delicious. The Brine- the cure is based on the water weight as you said, but the percent of pump is also a factor to be considered.

    I have found that when you use hot sauce ( I use Cholula ) as binder you get a little bit of heat from it. @5:40. This is something I tried for a experiment and it has came out great.

    Love the video! I do have some technical/specific questions as I'm gonna be bringing brisket for a similar amount of people: 1.) You mentioned that you'd vac seal it and sous vide it later, but it looks like you re-heated it in the oven in another foil boat at 300F? 2.) When you sous vide it where it's going to be eaten, what temp and how long if it's frozen? 3.) Can you slice and serve it right out of the sous vide or should you let it sit in or out of the bag when it's done in the sous vide?
