I have watched hundreds of videos on how to cook brisket and this is the best one I’ve ever seen. I’m going to cook my first brisket this weekend. Hopefully it will turn out like yours. If not I’ll just keep trying.

Good luck with your brisket cook. And yes, if it doesn't come out right the first time stick with it. I ruined many briskets when I first started but that's how I learned.

@@CentralTexasGrilling Okay I followed most of the instructions from this video and cooked my first 2 brisket over the weekend. Zero left overs and everyone was impressed, i made a few mistakes but overall great brisket. One thing I learned is the longer the cook time the better the brisket comes out and the rest time is very important.

Doing my first 8lb brisket today with slow n sear, sat at 250 so far for 8hrs warped in foil at 170 now at 192 :) video helped alot .

@@CentralTexasGrilling Came out great, i used 70 unlit coals in my Slow N Sear and added 5 lit briquettes to one end, cracked top and bottom vents and the thing ran at 250 for 15 hours lol. Brisket was done in 8hrs so next time might just use half the coal. This man has some great setups on the weber , he is the one i got the setup system from kzread.info/dash/bejne/c32M1cmJeNvaZrA.html
The most detailed tutorial. No steps missed, perfect for a novice like me. I went through about 10 other videos until I found this one.

I just got the kettle with the slow n sear plus, I've cooked twice on it so far, and awesome. Pork ribs & beef ribs have come out great using the 3-2-1 method

awesome video James. looked great. question: you mentioned rotating brisket every hour or so. did you also flip it to set the bark on the meat side? or was it left fat side up for entire cook?

I don't usually have to add extra fuel. One basket fuel usually gets it done.

Thank you for the best brisket video I have seen. I followed your method completely on my Webber kettle and my brisket turned out awesome. We got rave reviews from my friends and more than several 10's from the guys. I cooked what started as a 12.6 pound brisket, cut off about 2 pounds of fat following your suggestions. I wrapped, adding broth, at 180 degrees, added more coals, cooked another 1.5 hours bringing the meat to 210 degrees. I worried that I had overcooked it, but it was like butter and delicious. Your suggestion about putting the slice in the meat before cooking was inspired, once cooked you really have no idea about where the grain runs without that clue. A group of 12 not so big eaters devoured all but a pound of that brisket. Viewers, feel confident that if you follow the steps in this video you will have a truly great brisket. P.S. I didn't have a Slow n' Sear so I used bricks to separate coals from meat, also used a pan of water under the brisket. I had to add more coals twice to maintain temperature.

Thanks for sharing. That looked amazing. I do all my cooking on a Weber Kettle 22”. I normally do my indirect with coals on either side with a drip pan in the middle. I will have to get an S&S and try it that way.
