How to Roast Garlic | Emeril Lagasse

Emeril's easy technique for roasting garlic will help kick up the flavor in your kitchen. Not only does it make for a delicious appetizer spread, but it's a great addition to pizza, sauces, potatoes, and meats!
ROASTED GARLIC
MAKES 3 TO 4 HEADS
3 to 4 heads garlic, upper quarter removed
4 teaspoons olive oil
Coarse salt
Freshly ground black pepper
Fresh herbs, optional
Preheat the oven to 350 degrees.
Place the garlic on a foil-lined baking sheet and drizzle 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt, pepper, and fresh herbs, if desired. Wrap in foil and bake until cloves are soft and golden brown, about 1 hour. Remove from the oven and let sit until cool enough to handle. Squeeze each head over a small bowl to expel the roasted cloves. Set aside until needed.

    Hey Emeril, I actually do my roast garlic at 275 (F), but they're uncovered. This is fine because I also season my cast-iron cookware in the oven at the same time i'm slow-roasting my garlic (of course, I pull it out when they look done). But I also keep the oven on to finish seasoning my cookware because it has the added benefit of warming up the kitchen and adjacent rooms of my house. Perfect for cold days/nights, especially during the late-Autum, Winter, and early-Spring seasons.

    Why does your video say 400 degrees but your written instructions say 350 degrees? Which one is it?

    How long can you keep it in the fridge before it goes bad after you roast it? I normally food prep once a week. Would love to roast 7 of these at a time so i can have 1 a day. Just for the health benefits .

    Store it in a good amount of good olive oil and it lasts 2 weeks. Also makes amazing roasted garlic olive oil that goes great on breads and pastas.

    i roast garlic in butter in my air frier but i get such bad gas will cooking it in olive oil cure that problem or am i eating to much garlic cloves ?
