Thank you for this updated video of roasting garlic. I have always felt intimidated to try this for fear of doing it wrong / making folks sick, but your calmness and slow and clear instructions help alleviate those fears. I appreciate so much how much love, care, and passion you put into all your videos. You are an amazing chef and I am thankful to God that you are here to help folks like me learn to cook and nurture our passion for cooking. God Bless, Louise

I love the way you explain your recipes and give options to personalize and/or store the food-so important! Your video is the only one I found that doesn’t use foil. We avoid aluminum so I’m very grateful for this recipe! 😊 I haven’t tried this yet but I’ll use my air fryer liners, as always. They’re like giant parchment paper coffee filters that keep the clean-up very easy! For extra greasy foods, like chicken, I double them using two. Once the air fryer cools, just pick them up and toss. Your air fryer will be clean!

I was going to buy a garlic roster on ebay,. This looks like a better way to roast garlic, already have an air fryer. The storage submerged in evoo is a great trip.

Louise, I've been waiting for a vid on this for a long time. Just bought an air fryer (already have IP), and have seen recipes for roasted garlic; this seems the most logical/easiest way to prep the garlic. Love the idea of using jar/bag and covering the garlic in the EVOO! Gonna do a batch, for sure! Y'all Be Safe!

I just picked up a near new Ninja Dual off Craigs for 50 bucks. I'm blowin' away at how amazing an air fryer is. After reading countless data regarding the remarkable benefits of raw garlic, I really upped my intake. I finely chop and swallow half a head a day using an ounce of olive oil to coat my tongue and chase with bloody Mary mx. Painless. When eating raw garlic, it's important to know that garlic should be crushed / chopped, then wait for 10 minutes or so before consuming because the broken garlic cells and releases stored enzymes that react with oxygen. That triggers healthy sulfide compounds, such as allicin, to form. Even if you're not going to eat it raw and use for cooking, letting chopped garlic stand for 10 or more minutes before cooking allows the compounds to fully develop before heat inactivates the enzymes. But cooked garlic is such a shear delight with a brie cheese spread, I was curious if I could air fry garlic as a snack. She makes a very valid point about olive oil storage of garlic because (extra virgin) olive oils have a high polyphenol content that can inhibit the growth of pathogenic bacteria. Normal thorough cooking at 158° for 2 minutes will kill Cl. botulinum bacteria, but not its spores. To kill the spores of Cl. botulinum would require a sterilization process equivalent to 250° for 3 minutes. So, since she cooked the garlic at 325°, one would assume that it reached an internal temperature of 250°. To be sure, an instant read thermometer will answer that. But one should know that cooking garlic diminishes its vitamin content significantly to where it's nutritional benefit is near moot. So glad I found this video. Thank you.
