    chef Chin here in the Bahamas we don't cook with lemongrass, but I will loved to try it one day. here is a suggestion instead of throwing away the top of the lemongrass you can boil it for tea. Lemongrass tea is the only way we use lemongrass here. it also give the house a nice aroma.

    A few years ago, I fell in love with lemongrass while eating Tomyan soup for the first time in Thailand. Lemongrass has a mysterious and beautiful scent. Today, I learned how to prepare lemongrass for the first time. Thank you~👍👍👍

    Chef Chin, you're the best. Thank you so much for a perfect and complete explanation of how to use lemongrass properly. My local Asian market stopped supplying the jarred lemongrass I had been using to cook the occasional southeast Asian dish (but particularly Rendang Beef) and I was directed to the fresh lemongrass for the first time. (They also stopped supplying frozen galangal and are now selling fresh and raw galangal, so these are moves towards better, fresh products - a definite plus!) In any event, this was the simple, short and easy to follow explanation i needed to get this new fresh lemongrass into my homemade curry paste with minimum delay! I'm definitely subscribing to your channel. I can't wait to see your other useful tips as I expand the range of dishes of East and Southeast Asian origin that I can manage to cook at home. Thanks again, Just your nerdy friendly white dude living in a high Asian-American community near NYC. :)

    When trying to grow it, it is best to purchase stalks and plant them. Many plants sold potted are of a tougher tea variety and not for cooking. Tea variety red stalk and cooking variety green stalk.

    Thanks. I didnt know about the differences in toughness across varieties. I'm growing one that has partly turned to purple. I guess that is the tea one... I wondered about the woody bits in my soup myself.

    Save the fibrous parts and dry them to use in tea. (Discard the outermost layer or two because they'll have lost flavor as they've aged after harvest.)

    This is a good video, she didn't talk for 2.5 minutes before getting down to business; what a joy. What I learnt is: lemongrass is similar to leeks in that one generally uses only the lower bottom bit and the top part is discarded. I did not know, and then I did.

    Thank you so much chef Katie my silly behind went and used the top portion of the lemongrass cooked it for approximately 15 minutes and wondered why it was not getting softer to the point that one can chew it without thinking they're chewing on potato chips. So I thank you so very much. The worst thing to put inside of a Thai green curry soup is the top portion of the lemongrass when the bottom portion needs to go in LOL

    i remember a $30 buffet in vegas, green valley ranch would stir fry garlic, chilis, and lemongrass into a crispy topping that would come heaped over all you can eat split king crab legs you could get from the cold section, hand it to them and they reheat it in oil and aromatics before serving it back with garnish and drawn butter. No other vegas buffet does endless crab legs ao well like that.

    1:20 - whoa... so I'm paying $1.60 for one piece of a 3" grass stem. When is the best time to add the lemongrass for fried rice, do you add it at the end of the stir fry or at the middle during the cooking process?

    I use cooked lemongrass water in my daily bath mixed with tap water in turn lukewarm ! Feeling fresh all day !😊😊😊

    Lemongrass is sold in large quantities and was kind of expensive at the store. My recipe only calls for like, one stalk. Is there any way to preserve it and keep it ready for future dishes? Thanks!

    you can freeze whole stalks for a couple months but the best way to freeze it is to use a blender to turn it into a paste with a tiny bit of water and put it in an ice cube tray. when you want to use it, just throw a cube or two in your soup, curry or other dish.

    I haven't done this as yet, but my plan ('cause I just bought some - three stalks for $.86 at the Asian market) is to prep the lemongrass up to the point of smashing and then throw it in the freezer. Then when I'm ready just grab a frozen chunk from the freezer and throw it in the pot. Not sure if it will work, but that's my plan to impart flavor into my curry.

    Wow! I've been doing this all wrong. I minced up 100% of the lemongrass, (didn't throw away any of it), and added it to my stir fry. No wonder it tasted off lol... I was just eating hard chunks the entire time with no flavor.
