    I thought the same. Its a teppanyaki station and therefore Japanese. Chinese way is with a wok, just ask Uncle Roger!

    That's not really the traditional Chinese way of cooking fried rice. It's a very very modern and high class way of making it. Not many Chinese citizens can eat in a restaurant like that. It looks very yummy though.

    Khoan Vong he's spreading it thinner than a wok. I wish I had a grill like this so I could make a larger amount at once. I can never seem to be able to make as much as I want at once and still have that slightly dryness, but not too dry.

    this is actually teppanyaki though, it's more japanese style than chinese. Chinese chefs usually use woks over a stovetop with a roaring flame

    Salt is used in Chinese cooking. Soy sauce isn't used on everything. Some dishes don't need that particular flavor.

    Salt is used in most types of cooking but some cultures over do it. People in the US have been eating too much so they can't have all of this or even soy sauce. The lady that showed me how to make it was Chinese and she used Oyster sauce and not soy in the mixture. They may have used some to taste after cooking by individuals. I like her way. The fried rice tastes better.

    There's many variations of Fried Rice but this one is mine. 1. Use old rice. It has to be slightly dry before you cook it or you'll get a mushier texture. 2. Soy Sauce and/or Oyster Sauce 3. Chopped and seared Chinese Sausage (Lap Cheong) 4. Chopped Green onions 5. Under cooked scrambled eggs 6 White Pepper 7. Frozen Peas 8. Add water as needed and stir fry with an oily searing wok 9. Stir fry constantly for 5-6 minutes

    Too much moisture in rice. Make it with less water. Also, refrigerate the rice overnight. That helps dry it out.

    Chinese Americans invented pretty much all the dishes and performing elements in American Hibachi restaurants. In that sense he's right.

    I'm American and I learned to cook like an asain using woks and the different spices, oil, using the wok technique flipping food in the air and all that great stuff. Its simple stuff really but its apart of their heritage so that's why they take so much pride in it. It's something to learn these kind of skills acquired from this culture, I mean I'm a white boy and I always loved the Chinese culture since I was young, but man It kind of makes you discouraged when you try to embrace another kind of style and there's others who put you down.

    stuckIN801 Yes, and really good fried rice uses double the yolks to the whites...2:1 ratio of the yolk to white is much richer tasting.

    stuckIN801 You don't need more than 2 egg yolks and 1 egg white to make a generous portion of fried rice(to feed 2 or more people easily). My cardiologist said it's ok to eat one egg a day.

    +Vette gaddia eggs are one of the healthiest foods around, people freak about cholesterol when eggs actually have the good kind of cholesterol. Moral of the story, eat more eggs.

    @@karenskinner9044 My son has one and he loves it. I cooked on a flat the first time in 1961 when I was a short order cook in a luncheonette in the Bronx. I now have a "plancha" for my outdoor fire pit and love it also. It's the same thing as a flat but made to go over a wood fire.

    Great setup. You can see that the hottest part of the grill is the center. Eggs fried, chop chop put aside, onion and carrot saute, rice on eggs add a sprinkle of water to soften, mix all well, add salt and pepper, keep stirring, add green onions, sesame oil and soy, final stir and ready! For those that think it's too much salt, this is for 2-4 people and he put only a little soy sauce. Fast and efficient, Chinese style. Add chopped ham or shrimp and it's gold!

    The name Teppanyaki is Japanese for the style of cooking. Teppanyaki literally means iron plate cooking. The concept of fried rice made this way is from chinese cooking. It was made popular in the US by chinese and japanese steak house restaurants in a attempt to get people to pay a good chunk of cash for the entertainment of food being prepared in front of them. These styles of restaurants later became popular in Japan because they were popular in America. Its pretty hilarious when you think about it haha!
