How To Make White Chocolate Chip Macadamia Nut Cookies

A classic cookie with a decadent flair - these White Chocolate Chip Macadamia Nut Cookies are made with browned butter!

Ingredients
1 cup unsalted butter 226g
1 cup brown sugar 200g
2/3 cup white sugar 135g
2 large eggs room temperature preferred
1 ½ teaspoon vanilla extract
2 3/4 cups all-purpose flour 340g
1 Tablespoon cornstarch cornflour in UK
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cups premium white chocolate chips 170g
1 cup Macadamia nut pieces 110g
sea salt for sprinkling optional

Instructions
00:00 Introduction
Begin by Browning your Butter:
Preheat oven to 375F (190C) and line cookie sheets with parchment paper. Set aside.
00:27 Place butter in a medium-sized saucepan over medium-low heat.
01:10 Once butter has melted, increase heat to just above medium heat. Stir the butter and scrape the sides and bottom of the pan frequently with a wooden spoon or heatproof spatula - the butter will begin to bubble and pop. Once the bubbling/popping slows, the butter will begin to turn brown (see image). Once it begins to brown, remove from heat and pour into a large heat-proof bowl.
03:05 Allow butter to cool to room temperature before proceeding with the recipe.
Cookie Dough
03:33 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, baking soda and salt.
04:00 Add sugars into cooled browned butter and stir well.
04:44 Add eggs and vanilla extract and stir until well-combined.
05:00 Gradually add flour mixture to butter mixture, stirring until ingredients are nearly completely combined.
05:26 Add white chocolate chips and macadamia nut pieces and stir until ingredients are well-incorporated.
05:44 Cover bowl with plastic wrap and chill cookie dough in the refrigerator for at least 30 minutes before proceeding.
05:56 15 minutes before you are ready to bake cookies, preheat oven to 375F (190C) and line cookie sheets with parchment paper. Once oven is preheated and cookie dough has chilled, drop dough by heaping, rounded 1 1/2-Tbsp-sized scoops onto prepared cookie sheets, placing at least 2" apart.
06:29 Bake on 375F (190C) for 9-11 minutes or until edges are just beginning to turn golden brown (cookies should still be quite soft when you remove them from the oven, and may even appear slightly underbaked in center).
Sprinkle lightly with sea salt.
06:37 Allow cookies to cool completely on baking sheet.

    I made these cookies today and they were AMAZING! Your recipe is perfection!! 👍👍👍 After I made the dough, I divided it in half, (I eyeballed it) and used chocolate chips in one half and white chocolate chips in the other. One of my sons doesn't like white chocolate. Next time I'll do the same because my husband and younger son liked the chocolate chips, and my older son and I liked the white chocolate better, but they'reboth amazing! Thank you soo much.

I never thought that macadamia cookies could be so flavorful; and I've been using brown butter for over two years in my baked goods, and never once thought to use it in these cookies, until now.     It's been three years since I last commented on this video, and after whipping up a batch of these this afternoon, I wanted to come back and say this recipe is EXCELLENT and I've made these countless times since you posted this. The only thing that keeps me from making them more often is the cost of macadamia nuts...ouch... Sadly, I see that "The Algorithm" hasn't given this video much love and so I'll file these under "Sam's Hidden Gems". Even though this hasn't received many views, be rest assured those that have tried this recipe surely will have loved it! I know that I and everyone I've shared with has! Thanks as always!

    Hi I just found your recipe and it looks great. But if you don’t mind me asking are they moist? Last time my father made these and they turned out dry. But he didn’t use your recipe. Btw any tips on making them moist.

    These cookies are not a dry cookie. If they turn out dry there may be too much flour or they are over baked. Enjoy! 😊

    Hi, I've made your chocolate chip cookies but mine never look as nice as yours. They end up looking a bit grey/dullish and not nicely browned like yours if that makes sense. I can almost see the sugar granules even though I've mixed the wet ingredients well. Any tips?

    That is really weird. I’m really stumped on this one. I’m guessing one of your ingredients is bad somewhere. The sugars should melt in the oven. Do they need a minute or two longer in the oven? Is your oven temperature accurate?

    Just the regular setting. I don’t like to use tools people may not have and not everyone has a convection oven. I hope they turn out for you.

    I’ve got one question. Since I am visually impaired and I can’t brown butter to see it, is it possible that I can do the butter just to warm it up for at least four seconds while it’s in its package like you normally make cookie dough? That’s the only way I know how to make cookie dough. And yes, I’ve had white chocolate macadamia cookies from Mrs. fields some years ago. They do taste good.

    Warming the butter won’t add the flavor you are looking for. You can usually see the flecks against the bottom of the pan.

    My apologies. I read that wrong. You won’t get that great flavor with just the melted butter, but it will still work. I would use the same 1 cup of butter and they should still turn out for you. I hope you love them. 😊
