Thanks for the great recipe! Do you think I can risk replacing the corn syrup with agave syrup? I just never use corn syrup in my amateur experience and don't want to buy a whole bottle for two spoons; I happen to have some agave syrup laying around... Thanks!

If the Agave is similar to Honey, just replace with equal amounts. If the Agave is thin or watery, you can leave it out all together. Please let me know how they come out. Be well and thank you👍🏻

I love Callebaut's chocolate. I have a question please. The chocolate discs you put into the hot whipping cream. Were they callets or couveteure chocolate? I have both types and I really want to try your recipe and have it come out properly. Thank you for a great recipe.

Hi Sandy, I use the Callibaut Milk Chocolate Callets for both the inside ganosh ( milk chocolate and hot heavy cream part)and later on for dipping. If you like this recipe, you can do different variations. You can try dipping in either dark or white chocolate, which gives a totally different flavor or you can use white or semisweet chocolate for the inside. Other variations include adding small amounts of your favorite liquor or extracts to the ganosh. Good luck with these. There are actually relatively easy to make. Just after dipping, put them on either parchment paper or a silpat mat. Please let me know how they turn out. Be well

Can I substitute corn syrup with honey?(will that change the taste drastically?)

  • @CookingwithChefRich

Hi Falafel Star, I have never tried. But I am guessing, just based on the ratio of corn syrup to chocolate, it shouldn't change the taste dramatically. However, I would use a more neutral tasting honey. Please let me know how the turn out. Be well

Hi Teagan, Yes, you can use dark chocolate. Obviously, it will taste like dark chocolate. You can use it for the inside ganosh, or to coat the outside, or both. Please let me know how they turn out. Be well
