Making Great Sandwich
Bread:
You can use any bread you can fill, such as ciabatta, baguette, sourdough bread, or bagel. If you are going to use a higher fat bread such as bagel, be sure to grill it a little.
Lubricants:
You should choose a fatty product such as labneh, mayonnaise, butter, cream, olive paste, tomato paste. It both gives flavour and provides insulation between bread and ingredients. This way, when you put a juicy ingredient such as tomato or cucumber in the sandwich, these products will not wet the bread and soften it.
Cheese
Using spreadable cheeses such as labneh and cream cheese alongside aged cheeses such as kashar, tulum and white cheese is a very good way to increase the taste.
Meat
Be careful to use meats with a dominant flavour, such as bacon and dried meat, with mild cheeses, and meats such as salami, ham, and smoked meats with aged cheeses. You can make the meat more voluminous by folding it, or you can cut it into small pieces and distribute it evenly throughout the sandwich.
Greens& Veggies
Whatever greens you use, be sure to wash them and dry them thoroughly. Be sure to season ingredients such as tomatoes, cucumbers, cabbage and onions or flavor them with pickle juice.
To roast, fry or caramelize:
To increase the flavor of the sandwich, for example, if you are using peppers, you can roast them, if you are using potatoes, you can fry them, and if you are using onions, you can caramelize them.
Storing the Sandwich
Wrapping the sandwich and letting it sit increases its flavor. If you are going to eat it within a few hours, you can wrap it in stretch film, or if you are going to make it in the morning and eat it in the evening, you can wrap it in baking paper and store it.
Smoked Meat Sandwich
1/3 baguette bread
3 tablespoons of labneh cheese
5 slices of tomato
2 slices cheddar cheese
100 g cabbage
1 red pepper
2 tablespoons mayonnaise
Potato chips
2 slices any kind of smoked meat
3 slices of aged kashar or Tulum cheese
4 slices avocado
• Cut the bread in half and grill the inside
• Spread the labneh on both sides of the bread. It will prevent the bread from getting wet and keep it dry and crispy.
• Sprinkle a pinch of salt on the thinly sliced tomatoes and place them on the labneh.
• Add cheddar cheese and finely chopped cabbage on top.
• Roast 1 red pepper well, cut it into long thin strips and add it to the sandwich. Then add mayonnaise and potato chips.
• Place smoked meat, tulum cheese, avocado and cover the ingredients with other half of the bread.
Sandwich Ideas
Mini sandwich with bacon
Mini sandwich bread
1 tablespoon butter
3 slices avocado, thinly sliced
1 egg, sunny side up
2 slices of bacon
Bagel with feta cheese
1 bagel
1 tablespoon butter
50g white cheese, sliced
1 tomato, thinly sliced
1 pinch of salt
1 pinch of thyme
Aged cheddar and Bacon Bagels
1 bagel
1 tablespoon labne
1 onion, caramelized
3 slices of bacon
3 slices old cheddar
Cream cheese sandwich with dried meat
1 ciabatta bread
2 tablespoons olive labneh
5 sprigs of arugula
1 onion, caramelized
¼ red onion, cut into slices
3 gherkins, thinly sliced
2 tablespoons cream cheese
4 onion rings, fried
Tomato cheddar sandwich
1 ciabatta
2 tablespoons mayonnaise
5 sprigs of arugula
5 slices of turkey salami
4 tomato slices, thinly sliced
4 slices burger cheese
3 gherkins, thinly sliced

    Love this video. I worked in a deli for 14 years. I use to be queen of sandwich making. I did exactly what you are doing. In some of my meat sandwiches I would put apricot jam mixed in my cream cheese. Sounds weird but my customers loved it with all the other ingredients including sprouts. Seasoning is important.

    I love what you and your team are doing with the sandwiches to elevate them by having a formula to follow in preparation. People with food allergies and intolerances can find meal preparation extremely difficult and uninspiring. Trying to find a gluten free bread that tastes good is a task in itself. Adding additional food restrictions to making sandwiches brings in a whole new dimension to becoming creative. Making pesto spreads from another nut, vegetable or lettuce such as broccoli or arugula to replace butter because of a dairy allergy helps to level up the sandwich. Flavoured mayo also adds to the experience. Unfortunately vegan cheese really doesn’t cut it for me. I’m sure there is something out there, but I haven’t found it. Commercially produced deli meats can contain gluten, sulphites and other potential food allergens. Mustards are a lovely addition but are also a potential allergen just as peppers are to a small but growing population . Micro greens and sprouts - I don’t recall you ever growing those. You should as they would be a wonderful addition to your recipes/meals. Find a way to grow them with as little waste and without having to invest in lots of fancy equipment. Everyone can do this at home all year round if they are motivated - this would expand from sandwich to vegetable bowls/salads.

    I’m known for being a great cook but I still learn things from you! Never thought about using pickle juice on cabbage, though I do use it on my tuna or eggs when making salad from them! Nice tip!     A good sandwich is a work of art. We in America certainly take sandwiches for granted. It is usually bread, mustard or mayo and meat and cheese. Lunch becomes basically uninteresting. Thank you for the video and keep up the great work!!!!
