How To Make THE BEST Sandwich Bread || Pullman Loaf Pan

I love overcoming problems, even if the solution is simple. My problem was crumbly, homemade sandwich bread that my family didn't love. The solution? The Pullman Loaf Pan (made in the USA), and a killer recipe.

And here is the recipe:
2 c whole wheat flour
2 3/4 c white all purpose flour
1 2/3 c warm water
3 tbsp sugar (or honey)
2 heaping tsp yeast
3 tbsp instant potato flakes
1/4 c dry milk powder
2 1/2 tsp salt
6 tbsp softened butter
Mix all ingredients in stand mixer. Knead for 5 minutes. Shape dough into a ball and put into a lightly oiled bowl for rising, and cover with a tea towel or plastic wrap. Allow to rise until doubled in size (about 2 hours). Press out, roll up, and press gently into greased Pullman loaf pan. Slide on lid. Allow to rise until an inch from the lip of the pan (about an hour). Bake at 350 degrees Fahrenheit for 30 minutes. Remove lid and bake for an additional 5 minutes. Remove from the oven. Turn bread out and rub down in butter. Enjoy!

    You need to use your oven as a proofing oven. Turn the oven on to 200 and let heat up a bit, depending upon your oven, the fuel source etc, it'll only take a few minutes, once you feel that the oven is warm, turn it off.. Make your dough, place in bowl, cover and place in the proofing oven to rise. Punch down shape, fill pullman, again, turn to a warmed proofing oven and let rise. This will significantly cut down on the time needed for rising. I only ever skip this if it's hot, in the Summer. 45 minutes-1 hour for first proof. 30-45 minutes for second. I've done this in a 68 degree home (up here in CT), and it makes a big difference. HTH

    Looks amazing! I have a similar bread recipe and I agree with you, the potato flakes bump it up to the next level. Sidenote: love your little crate with the KY Proud emblem.     I made this for the first time today. It’s soft and delicious. I wasn’t sure whether I should brush the butter on all sides or just the top. I buttered all but the bottom. I may have gone overboard… 😅 But it’s delicious!

    It's nice to have a recipe for the 13 inch Pullman pan. I always have to use a recipe that makes two loaves then do a ton of math to figure out ⅔ of the recipe. Thank you!

    I make a lot of bread. Very good bread. I am always trying new recipes and this one is in my top 5. Excellent bread. I have 2 Pullman pans so I doubled the recipe. I only increased the yeast by 1.5. What a fantastic recipe. Thank you for sharing.

    I first saw the Pullman loaf pan on the Kneady Homesteader. That pan seems amazing. I do not make homemade bread because I live alone and that it too much bread for me. I tend to throw away a lot of bread. 🙏 for the house situation and keep you and your family safe.

    I have gone to slicing it up and only keep out a few slices to eat and freezing the rest. I pull out a couple of slices and defrost it in the toaster. This works great and you get the benefit of homemade bread.

    I have been thinking about getting one of those pans since you first showed yours. I know some others have one too. I need to get myself confident with bread in the oven (I use a bread machine now), then I will buy one of these pans. I can try your recipe in a regular bread pan though, right?

    In the winter I put my dough bowls and bread/rolls pans on a heat register and cover it with a towel to rise. It works great.

    I also let the baked bread sit in the pan for 15 minutes before I take it out of the pan and then cool it on a rack. It helps keep the loaf from sagging.

    Wow! I’m having a deja vu! I just watched a video before watching you & both of you had the same EXACT recipe, with different bakers! Is this the only recipe for Pullman pans or can we use other recipes? I was kind of hoping to use this fo a variety of sandwich breads. I guess I’ll watch a third Pullman pan video. If it’s just like the first & second one, I’m going to turn off the TV and go outside because I don’t like being in the Twilight Zone.

    Quick tip...Put bread to rise in the oven covered with the tea towel with the lightbulb on when the house is a bit cool. Give it try.

    Putting it in a large ziplock bag lasted longer. I’ve also tried using an airtight container which works better.

    If you do not want to invest in a pullman pan, you can simply let your dough rise for a bout half of the usual time during the second rise. It will result in a more dense loaf that resembles sandwich bread. You can also cover the top with foil during the last 10 or 15 minutes of cooking to prevent over Browning.

    Ok, I am trying to start learning to bake bread at home and I purchased Pullman pans, but I got the smaller 9x4x4 Pullman pans so they will fit inside my Sun Oven. So that I can still bake bread without electricity. I have made a few batches and so far I can not figure out what amount of dough I need to make to properly fill the Pullman pan. I have tried both a 1 and a 2 pound recipe, neither of them seem to be correct for this sized pan. Do you have any idea where I can get a recipe that will work properly in this Pullman pan?

    Nope! I used iodized because that's what I had.
