French Sandwich Bread (Hand Kneaded)

This bread is called "Pain de Mie" in France. When allowed to cool to room temperature, it can be sliced very thinly. Ingredients and links are listed below:

2 1/4 teaspoons yeast (active dry or instant) dissolved in 1/4 cup warm water
4 3/4 cups bread flour or all-purpose flour
1 2/3 cups warm whole milk
2 1/2 teaspoons kosher salt
6 tablespoons butter
Oven temperature and time: 435°F for 35-40 minutes

I used to love "Very Thin" Pepperidge Farm bread, but it has been increasingly difficult to find it in local grocery stores. I was also always put off by the many questionable ingredients in PF bread. So, after doing a KZread search for pullman loaf recipes, I happened upon your video. I was so inspired by the clarity of your instructions and "can do" attitude that I bought a pullman pan and today decided to tackle making pain de mie. I followed your instructions to a "T," and the loaf came out perfectly!!! Fyi, I have never before made a hand-kneaded bread. You are a magnificent teacher. Thank you for encouraging us to have an adventurous spirit and for sharing your kitchen wisdom.

Thank you ! I appreciate the fact that you recognize that not everyone has the $300 dollar stand mixer. People have been making bread forever, and it wasn't until recent times that we had stand mixers and bread making machines. Plus, I think there is something to be said of actually working with the bread dough. It's a good experience. Good for the bread and good for the bread maker.

i was able to get a 660 watt stand mixer for less than 150$ on amazon. more watts than a kitchen aide. i use it frequently and the metal bowl is great for other uses
Kevin, it's never too long a segment to watch someone knead bread! I've been making bread forever and use both hands when kneading so found your technique not only interesting but educational as the results were picture perfect AND you avoided over-flouring to prevent sticky dough on hands and board! I'm going to try that next time. Especially picking up the dough and slamming it to the board;-) Thank you for the step-by-step. It was great!

I’m teaching my 7 year old grandson to bake and cook. He loves making bread. I now have the pan so we are at the first rise. I had a bit of a time with the butter because it’s summer and my house is warm. 80 degrees. So the butter melted pretty fast. Can’t wait will it’s done! Kevin, I made this today and it turned out fantastic. Thanks for posting! By the way, my oven dial is in increments of 25 degrees so I baked it at 425 and it turned out fine. I’ve never seen a recipe use such an odd temp like 435 before.

Hey Kevin, can’t wait to make this one, it is on my to-do list. You have the best technique for bread baking! All your recipes I’ve tried has been successful. Maybe when you get around to it, you could do a dinner roll recipe. I know if there is the perfect roll out there, you would be the one with that recipe. I made this yesterday, and woah everyone in the family loved it. We went strawberry picking, and made jam as well. So combined with this bread, it was just sensational. Thank you for posting a recipe without the standmixer so we can make it the ol' fashioned way. My daughter loves baking with me, and she helped along the way.

Enjoyed video. It's a pleasure seeing someone make bread by hand since I'm one of the unfortunately people that doesn't own an expensive stand mixer.. Have tried making in past and it came out very heavy. Only thing end result was for being the trash. Will have to try your recipe.

Oh no! I looked for the stand mixer version and it was 404 error!! Due to physical limitations right now, I don't know if I can do this without my stand mixer. Gggrrrrrrf just my luck! However, all is not lost! I did find some wonderful recipes on your web site I must try! Ciao!

Label says "Tesla Extra Virgin Olive Oil." I purchased it from a local farm store -- $20 for 8 ounces! (Good thing I liked it.)
Is there any difference between Bread flour and All Purpose flour?

Sorry to hear that your dough did not rise. Make sure your yeast is fresh! (Yeast does not require sugar to become active.)
