Did you grow up eating red bean soup? For us, it was DESSERT after every meal at a Chinese restaurant or a fancy banquet meal! This dessert is special because it reminds us of our time spent with family! The concept itself is interesting - DESSERT SOUP. If you've never tried or heard of this before, you're in for a treat!
RED BEANS (Adzuki beans or red mung beans) offer no natural sweetness. But when you add COCONUT MILK and ORANGE ZEST, the combination of flavors provide a warm, comforting sweetness that makes you feel like you're being hugged. It's THAT good.
We hope you guys enjoy this recipe! It combines all the flavors that we love. And it's safe to say that this was the BEST red bean soup we've ever tasted! So go out there and get cooking!
Full recipe details below, fellow chefies!
RED BEAN SOUP
1. Soak 2 cups of dried adzuki beans overnight.
2. Use a fine mesh sieve to drain out the water from the beans the next day.
3. Pour 10 cups of room temperature water in a pot.
4. Add the 2 cups of drained beans to the pot.
5. Bring water and beans to a boil.
6. Then, reduce heat to low and boil for 1-1.5 hours.
7. To cook your tapioca pearls, boil 2 cups of water. Then, add 1/4 cup of pearls.
8. Cook for 10 minutes.
9. Then, take pearls off the heat but leave in pot for another 15 minutes.
10. After 1-1.5 hours for the beans, add 1 cup rock sugar. Stir to dissolve.
11. Add 1/2 tsp of orange zest. Stir to mix.
12. Add 1/2 can of coconut milk. Stir to mix.
13. Serve, and enjoy!

NOTE: If you don't have rock sugar, regular cane sugar does the trick! Sub it for equal amount.

    It’s not often that you see beans used in desserts but definitely in soups. This recipe is new to me and worth giving a try. Looks so delicious! Can’t wait to see what’s next guys ❤️

    Red bean soup is easy recipe, lol 😂 inexpensive to make. I love it, and make it year round. Healthiest desert ever! I never thought of adding coconut though, great tip!

    I couldn't find dried azuki beans in our supermarket but I do have prepared canned redbean paste. How much do I use for this soup recipe using that instead ? Is this the same recipe for the redbean ice fountain drink as well ? That is a favorite when we eat out and is ice cream free. Thanks.

    Hi there! Canned red bean paste is an awesome alternative to have. We've personally never used red bean paste for this recipe, but u'll definitely need less of the paste and less water to cook it as well! Here's a resource u can refer to for specific measurements (there's a section on using stored red bean paste for the recipe): www.justonecookbook.com/zenzai-red-bean-soup/ Also, the recipe to make the iced red bean drink is likely a little bit different from this soup recipe 🙂 this soup recipe is a bit heavier and thicker, so for the drink, you'd want to use milk or milk alternatives instead.     Hi, I just watched this video and didn't read all the comments. I'm not sure someone has asked it or not. You said to add 1/2 tsp of orange zest into the soup and save the rest to be used later. I didn't seem to see you showing us how you use the rest for later. Is it to add the rest when we eat the soup? Or add it right b4 we turn off the heat something like that? Thks.

    Haha we forgot to add it in, but it's to be mixed into the soup towards the very end of cooking. Hope this helps!

    Thks for your reply. Before watching your video, I bought some dried red beans last week but forgot to buy those traditiomal dried orange peels. Then I thought of using fresh orange peels. What a coincidence I came across your video. Great! I'll definitely follow your recipe but I'll skip that tapioca part. Thks for your orange zest idea.
