This is an excellent demonstration- thank you very much!!
A good presentation of the technique with tools everyone will have.
Thank you for making this video. I ate some of this at an Oktoberfest a few years ago and fell in love it. But I couldn't' remember the name so I never knew how to make it. Now I know. I'm going to go make some asap. Thank you again.
Hi! Great explanation:) I am making spatzle tomorrow
You can also use a potato ricer instead of a perforated pan.
Great video--perfectly explained. I had no idea spaetzle was such a loose batter. Had thought it was more like egg noodles in consistency. Also didn't realize about the sautéing after to crisp it up a bit. Chef did forget to mention how much flour to use, but will research it. Now I feel like I get the method.

3 cups of flour but I had to add abit more liquid as I found the batter was abit too thick.
I followed this recipe using whole-wheat flour. The dough came out as thick as play-doh, but I just got one of those $10 sliding spatzle makers that you can get on amazon, and it worked like a charm. Well, the noodles came out quite large, but they cooked really well and even. Plus, I remembered to spray the spatzle maker with cooking spray every once and a while, and had no problems. Thanks for the demo!

Such a good point about cooking spray!
We use a cheese grater and a spatula instead. It does take longer but you have a bit more control.
Is there a list of quantities somewhere in this video? I have watched it 5 times and tried to scroll up or down but that won't happen either.
My grandma from the old country owned a diner and she squeezed the dough in her fist between her fingers in the water. She could do it perfectly smooth and sized. There were a lot of customers and they didn't have time to have dirty perforated pans.

She sounds awesome!
The old fashioned method by scraping the dough off a wooden board using a bench scraper is less messy and works well.
You need to show the final product so we can see how it was supposed to look.

It's not supposed to look like this. Cause he made them wrong.

exactly what I thought, I was so disappointed to not see the shape and size of the finished product. I cut mine by hand and was excited to see this pan, however, size and appearance is important to me... so now I don't know for sure, but these look like they might be too short, too small and too thin for our liking... escoffierschool

Nice twist on a classic German recipe. 🍺😋👍 Btw, the 'e' isn't silent in *Spaetzle.* Its pronounced exactly as the 1st 'e' in _'recipe.'_

You're right, the e isn't silent, but it's not pronounced like recipe. he also says the ae sound wrong as well as the z. kzread.info/dash/bejne/pKWD0Mdwoa6tptI.html

Exactly. Every time chef pronounced it, I was mentally correcting him. Shpets-leh.
Would have been nice to zoom in on the späztle sometimes.

is he wearing a hair net? or is it just that slick EDIT: ...it's been a year now....i still wonder about this...

It's just his hair. I've magnified this video on a very large screen.
A final "e" in a German word is not silent.
Would have liked to know what type of flour dude. Think you can make this "Low-Carb?"
@Thedudenurse

I think it is low carb considering he dumped most of the shit on the counter! LMAO!
Something is off here. The recipe makes a dry dough nothing resembling a batter?

It's not Eastern European. It's German, specifically Swabian, which is Southwestern German. The part of Germany just north of Switzerland and western Austria.

Had to add another egg and more milk to get it to the consistency you had. Maybe someone should test the recipe before you post a video.

Depends on the size of your eggs. Maybe you should check the size before posting such nasty comments 🙄
that perforated pan is a terrible idea. It makes a real mess. a colender would be a better idea.
When a person doesn't know how to pronounce Spätzle, chances are pretty good they're not making the real thing anyway. (I've seen this at least eight times on TV. Can't say it = can't do it.)

Unrelated. He grew up eating it. He's a pro chef. People where he grew up pronounced it like that. No big deal. Ability to craft food is unrelated to pronunciation.
Well at least you got most of the mix in the boiling water..
Spaetzle is homemade noodles, not dumplings.

I’ve heard it referred to as either. Technically it could be either.
Why is the camera on the cook and not on the spaetzle? Who gives a rat's organ of elimination about the cook?

My mother is German and makes Spatzle all the time. This is not remotely close as to how to make it. Lol your even pronouncing it wrong.
