    The other spätzle maker perhaps looks like a strainer in America but is most likely another spätzle maker in Germany!? I’m Hungarian and we make the very same thing except it’s called nokedli. So, I have the metal board filled with holes and a white running cube that slides across the top! Whichever mechanism, it comes in handy!

    Two comments: First, at one point in the video you mentioned a sauce for the Spätzle, but that wasn't part of this video. Perhaps on another occasion you could share a sauce or two for Spätzle. Secondly, given the amount of time from when the first Spätzle hits the water off the end of the Spätzle board until the last one drops into the water represents quite a difference in cooking time. Wouldn't there be a quite range of "doneness" between the first and last noodle?

    I have two kinds of sauce for Spätzle on my channel already and there will be more. One thing that goes only with Spätzle is the swabian lentil stew. kzread.info/dash/bejne/e5yZ1ZKmacbHkrg.html Another wonderful combination is Spätzle with Zürcher Rahmgeschnetzeltes. In the video i serve it with Rösti but it goes even better with Spätzle. kzread.info/dash/bejne/hYZlw5p7lLmtmso.html You are right about the "doneness". It also occurs naturally as the Spätzle have different diameters when they are made by hand. But the more often you make the Spätzle, the quicker you get and the smaller the difference in cooking time is. So when you are a beginner, just make smaller batches at once. And the magical thing about Spätzle is, that unless you cook them really, really long, the might differ in chewyness but they don't get really soft and soggy so you can just enjoy that every single piece has it's own character.

    Thank you for your comments. I will look for the sauces once I summon up the courage to make Spätzle. I have one recipe for Spätzle that includes a Mushroom Gravy as the sauce. I would likely have tried making Spätzle save for the necessity of purchasing yet another kitchen gadget. I greatly appreciate the clarity of your explanations.     Hi. I have a question. You only used eggs and flour and salt? Your eggs looked pretty juicy and liquidy. And they were pretty big. So, do you recommend using extra large eggs or adding a little water? Thank you for the recipe. From USA

    It's not so much the number of eggs that counts. Just check the texture of the batter and if it looks like in the video, you'll be fine. Actually when you use a Spätzle press, you can make it a little runnier. And surely you can adjust that by adding water (or flour, when too runny). Enjoy your cooking!

    Amazon calls it a "spaetzle maker lid." // I am surprised you used no water in your dough. // I have seen a German cook on KZread use a press that just had round holes in it. It seemed to work fine making very long narrow noodles. // I have a spaetzle maker made in Austria that has a handle that turns like a food mill. (Allgau borders Austria.) It only takes an instant to make Knopfle like a spaetzle lid. // Look how much I have learned!

    Now that spätzle mill makes me curious. Have never heard of something like that. Can you post a link? The main benefit of Spätzle ist their capability to have a lot of gravy sticking to it. That is because of their rough surface, lots of small 'canyons' and their overall shape. If you use a Spätzle maker with round holes you have the rough surface but no canyons and a round shape is the one that offers the least amount of surface related to the volume. It works but it isn't perfect 🤷 Cheers 🍻 Flo
