How To Make Shrimp Scampi Using ALL Of The Shrimp

This Shrimp Scampi Recipe was Shockingly good and It really has a lot to do with the way we used the peels and heads to extract the full flavor from the shrimp itself.
Shrimp Scampi Recipe:
24 shrimp peeled and de headed
1 pound pasta of choice (0.45 kg pasta)
5-7 large cloves of garlic
2 large shallots
1 Fresno chili (or 1/2 tbsp chili flakes)
1/3 cup chopped Italian parsley
1 1/2 cups dry white wine reduced to 3/4 cup (350 ml reduced to 177 ml)
1/2 cup water (118 ml)
4 tbsp olive oil
6 tbsp unsalted butter (85 grams)
1 lemon zested and juiced
Salt and pepper to taste

    Hear, hear I stopped watching cooking videos a long time ago and this is really the only cooking channels I actively watch now bc all the other channels and personalities are just copies of each other.     Not only has my cooking improved considerably, but my pleasure of cooking has returned. The joy of cooking incarnated! My career was in music, film score and albums. Music is all about timing, when to bring in and when to take out this instrument and that motif. Sonny cooks like the finest of composers and musicians.

    My grandma would put the shrimp shells and head into the blender, add some water and blend it. She would strain it and then squeeze with her hands the shells to get the rest of the juice out of them. Nothing was wasted😊. Thank you for bringing back the memories!

    i boil the shells for 20 minutes and use that liquid for the sauce, makes a big difference

    I made this but used sautéed summer squash for pasta because some of the guests were doing keto. It came out FANTASTIC. Used heirloom grape sized tomatoes to blister. People were very happy.

    This recipe is insanely good looking and delicious looking. My indonesian grandma used to use shrimp heads in a similar way, to make this beautiful orange umami potion. We’d have it with white rice, cooked eggs and bell peppers. Just remembering it makes me happily emotional. And hungry. Thanks, chef!

    This is by far the best cooking show on KZread. So many handy tricks along with the recipes. He’s probably one the most skilled chefs on the platform. Most KZread chefs just cook wagyu every time to mask their lack of skill, so boring.

    Sonny, you should look into the etymology of this dish. In Italian, "scampi" is a type of crustacean that is like a small lobster or an ocean crayfish or a langoustine. It is not the name of a pasta dish. Italian-Americans didn't have access to this kind of crustacean in the US, so they made a dish roughly equivalent to the scampi pasta they made in Italy, but using shrimp instead of scampi. But in order for people who were familiar with the dish from the old country to recognize it, they called it pasta with shrimp scampi, meaning they were using shrimp instead of scampi for this pasta dish. If you have access to langoustines, crayfish, or some other similar small lobster, it may be worth trying this recipe with those instead of shrimp to see if it is any better using something more similar to what would have been originally used.

    Sonny, there's a trick for shelling and de-veining the shrimp in a simpler motion: use small scissors, stick the lower prong into the hole where the vein is, and snip along the back of the shrimp. This snips through the shell and exposes the vein in one go. Most small scissors with pointy tips work for this, but if you want an optimized tool, there are shrimp scissors you can buy that are slightly curved that do this task better.

    The only thing new to me here was the blistered tomatoes. Gonna try it. Butapart from that, EVERITHING you've mentioned here, Sonny: is all of the best ways and tricks about cooking shrimp and noodles. (Btw: for deveining, many use a toothpick.     Bro! Since finding your videos I can't stop watching then and making the recipes, you really know what you are doing, and make it so entertaining and fun, you seem very cool and would be fun to hang with and cook and punch refrigerators lol!!
