8 ounces dried white beans, soaked in salted water
1 yellow onion, halved
1 head garlic, halved
2 bay leaves
2 sprigs rosemary
Peppercorns
Salt
Stew:
⅓ cup olive oil
1 medium yellow onion, chopped
1 small fennel
1 small carrot, chopped
1 celery stalk, chopped
4 smashed garlic cloves
Chopped fresh rosemary
Kosher salt and red pepper flakes
½ cup white wine
1 15-ounce can whole peeled tomatoes, crushed
Parm rinds
1 bunch chopped kale

    this may be odd but i think a cool video idea would be to talk about how often you food shop for produce and how you store it because something i struggle with is planning meals that have fresh ingredients and timing when to cook them/when the produce is still good. i hope that makes sense but i figured since you use a lot of fresh ingredients it would be interesting to hear your approach!

    Claire is a pro cook making recipes and books and has a cooking show i dont think she manages her produce the same way a regular person would, maybe look out for home cook content creator instead?

    As a person from Tuscany that has been eating ribollita since I was born, I want to highlight the fact that it is a “piatto dei poveri” that means a dish for poor people, made with whatever you already have at home. My granny likes to keep it vegan, since cheese was expensive in the past, after wwII. I hope whoever wants to replicate the idea keeps that in mind: don’t buy expensive vegetables and ingredients in order to make it, just use whatever is sitting in you fridge and enjoy the process! 🥬🧅🥔🥖

    Actually paused the video to write about how much enjoy the funny little details in your videos. Always meant to do it and would forget by the end of the video. Laughed at the slight change in the theme song, but really 😂 when I saw the little faces/expressions on the garlic cloves as you were smacking them with the knife. Enjoyed the chicken cam too.     @ClaireSaffitz - by accident or design, your first choice for dinner uses a baked good. You could do a whole series of savory dinner recipes using leftover bread or bread dough. Panzanilla. Savory French toast. Pizza. Breakfast casserole from different countries or cuisines. Bread crumbs and ways to use them. Croutons and dishes that use them. Lasagna with slices of stale bread instead of pasta. Soup with large crouton top. Savory bread pudding. And more that we don't commonly see or use.

    Love this dish, what a hearty supper. The added oil helps to replace a bit of the experience of a meat broth. A couple of tips for issues Claire brought up. When chopping/dicing garlic, adding salt will help it from sticking to your knife. And for the fennel, chopping it with some oil will help prevent it from flying all over your kitchen.

    An absolute favorite of mine, just not during the heat wave right now. Will definitely make it next week when the rains come! I am glad you mentioned how much the garlic flavor came through after cooking because I felt sorry for the little cuties as they were being smashed but it was all for a good cause.     Im really happy with this series! I don't really bake at all (except bread) but still watch Claire's videos because I just really enjoy em, but now I can finally make stuff she puts on here more often! Also she mentioned how it's regular cooking is intuitive, I love that because back in her Gourmet makes days, that's what I enjoyed the most; when she would problem solve and create this brilliant final products!

    Yum, I love cozy and hearty meals. When cooking, I find chopping relaxing so I especially liked the chopping part of the video. Soup/stew and bread is a classic combo, I didn't know there was a dish that puts them together like this. As a vegetarian, I appreciate you keeping it veggie :). Also loved the adorable faces on the garlic. More cooking videos would be great

    Just made this for dinner! It was divine. It’s absolutely worth it to use dried beans and make bean stock. I added some crumbled Italian sausage to the soup. Served it with a shaved fennel, apple, and lettuce salad. Wonderful. Thank you Claire!

    The stew looks delicious. I'm saving this, my doctor will thank you. I also adore garlic rubbed toast. I make a very finely chopped kalamata olive/salt/olive oil paste and eat it on the garliced toast. Yummy snack.
