How To Make FLATBREAD with Claire Saffitz | Dessert Person
These soft-on-the-inside and crispy-and-charred-on-the-outside flatbreads have a secret ingredient: cooked potato. It keeps them pillowy and flexible and ideal for stuffing with feta cheese and slathering in zaatar oil. But if you take away nothing else, let it be the delicious eggplant dip that accompanies these flatbreads, which is easy and simple and can be your go-to late summer side dish.

Soft & Pillowy Flatbread
Special Equipment:
Instant-read thermometer, griddle or large skillet (preferably cast iron)
Ingredients:
1 russet potato (about 8 oz / 227g), peeled and cut into 1-inch pieces
1 teaspoon active dry yeast (0.11 oz / 3 g)
3 1/4 cups all-purpose flour (15 oz / 423g), plus more for work surface
2 tablespoons extra-virgin olive oil (1 oz / 28g), plus more for bowl
2 teaspoons Diamond Crystal kosher salt (0.21 oz / 6g)
Flaky salt, for sprinkling the top
Feta-Za'atar Flatbread
1/4 cup za'atar
8 ounces (227g) feta cheese, crumbled (about 1 1/2 cups)
1/4 cup extra-virgin olive oil (2 oz / 57g), plus more for rolling out

I can only imagine how good that kitchen smelled after all the flatbreads were made. Feta and Za'atar are god tier yummy. Not super into eggplant but I will try out this dip. It might change my mind...?

I made this dip a few weeks ago. It was heavenly, and didn’t really taste like eggplant- more like smooth rich garlicky goodness. That being said, I do like eggplant.

Roasted eggplants are a reaaaaaally nice way to get more into them, because they get a smokiness to them that's just so satisfying! I usually just do that on the stove burner tho (using a kitchen tong)

honestly, zaatar manaeesh are usually had with just labneh (at least in my household) so you're fine with skipping the eggplant.

Try out classic baba ganoush! I dont like eggplant either but baba ganoush is a middle eastern type dip similar to hummus and it's very good. No strange texture from the eggplant.

My aunt gave me Claire's book for my birthday and the flat breads with the eggplant dip was one of the first recipes I made and especially the eggplant dip is ADDICTIVE! It's sooo good. And the little twist with the feta in the flat bread is amazing. I have to make this again soon!

This was genuinely the first thing I made from the book when I got it. I love feta and za'atar so I was SOLD on it instantly. So so good.

Arabic dishes are so close to my heart. I am an Indian but I have been born and raised in Saudi Arabia for the last 20 years, cannot lie but this was so perfect to the traditional way to do the recipe. Usually we bake the bread in a stone oven (pizza oven). really loved this episode

Fresh flatbread is so good, I can't even wait to serve it with something. I just start tearing into it as soon as its out of the oven and then fall into a food coma from the deliciousness. I have never successfully eaten fresh flatbread with a dip.

Sounds yummy. Your aprons - they make me nostalgic. My grandmother's sister, Aunt Mary, wore that type and had them in lots of patterns and colors. She even wore them for general housework to keep her dress clean.

THE WINKING POTATOOOOO!!!! I'm not allowed to really eat breads or sugar anymore so watching Claire's channel is tantamount to torture but I cant not watch 🥺💖
It's also super easy to make your own labneh! All you need is full fat yogurt (greek is fine but will make a denser end product). You basically just dump a whole thing of yogurt into a cheesecloth, wrap it up into a tight bundle and knot it onto a dowel or long spoon and hang it over a mixing bowl so there s 3-4 inches clearance. Then leave it alone all day. The whey will drip out slowly and you are left with labneh, which you can then salt and add any other flavors you'd like.

Made this alongside Samin Nosrat’s Persian Kufte and Salad-e Shirazi and it was absolutely delightful :) I found I had to turn the heat down more towards a medium-low temperature to avoid getting too much char on my flatbread but they were still amazing!
I’ve made this a few times and LOVE it and i’m making it again this Thursday now for my bf to try!
